CHOCOLATE BANANA GOOEY BARS

Who would have guessed that such commonly available, reasonably priced

ingredients—a cake mix, a few bananas, and a package of cream cheese—could

lead to such a supreme treat, with such little effort to boot? Kids of all ages will

line up for seconds (and thirds!).

PREHEAT OVEN TO 350°F

MAKES 3 DOZEN BARS

13 x 9-INCH BAKING PAN, GREASED OR LINED WITH FOIL (SEE

PAGE 16)

1 (18.25-ounce) package yellow or chocolate cake mix

1 cup (2 sticks) butter, melted, divided

4 large eggs

1 (8-ounce) package cream cheese, softened

1 1/2 cups mashed banana (about 3 large bananas)

2 teaspoons vanilla extract

1 (16-ounce) package confectioners’ sugar

1/2 teaspoon ground nutmeg

1. Mix the cake mix, 1/2 cup (1 stick) melted butter, and 1 egg in large bowl

with electric mixer on medium speed until blended (dough will be thick).

Pat evenly into prepared pan.

2. Beat the cream cheese and mashed banana in large bowl with electric

mixer on high speed until blended and smooth. Beat in the remaining 1/2

cup (1 stick) melted butter, remaining 3 eggs, and vanilla extract. Beat in

the confectioners’ sugar and nutmeg until blended. Spread over prepared

crust.

3. Bake 42 to 45 minutes until golden (do not overbake; bars should be

slightly gooey). Transfer to a wire rack and cool completely. Cut into

bars or squares. Cover and store in refrigerator.
