HAZELNUT BISCOTTI

Hazelnuts were difficult to find a few years ago, but now they are readily

available, and very affordable, to home cooks. It’s a wonderful offering to home

bakers, since hazelnuts add a distinctive sweet-nutty flavor and crisp crunch to

cookies, such as these easy biscotti. Look for the hazelnuts, shelled and chopped,

in the baking aisle where other nuts are shelved.

PREHEAT OVEN TO 350°F

MAKES 3 DOZEN COOKIES

COOKIE SHEETS, GREASED OR LINED WITH PARCHMENT PAPER

1 (18.25-ounce) package white cake mix

1 cup all-purpose flour

1/2 cup (1 stick) butter, melted

2 large eggs

1/4 cup packed light brown sugar

1 1/2 cups chopped hazelnuts

1. Mix the cake mix, flour, melted butter, eggs, and brown sugar in a large

bowl with an electric mixer on medium speed 1 to 2 minutes until well

blended (dough will be very stiff). Mix in the hazelnuts with wooden

spoon.

2. On prepared cookie sheet, shape dough into two 12 x 3-inch rectangles,

using moistened hands.

3. Bake 25 to 30 minutes until golden and center is set. Cool on cookie

sheet on cooling rack 15 minutes.

4. Cut rectangles crosswise into 1/2-inch slices. Place slices, cut sides

down, on cookie sheet. Bake 10 to 12 minutes longer or until edges are

dark golden. Cool 1 minute on sheets, then remove cookies with spatula

to wire racks to cool completely.

VARIATION for Hazelnut Biscotti

ALMOND BISCOTTI: Prepare as directed but add 1 teaspoon almond extract
