FRESH ORANGE MADELEINES

I love these madeleines for their lightness and intense orange flavor. The most

difficult thing about making them is remembering to take it easy when folding the

egg whites into the batter—the gentler the folding, the airier the madeleines. For

a fancier final flourish, consider dipping each madeleine in melted white

chocolate instead of dusting with confectioners’ sugar.

PREHEAT OVEN TO 350°F

MAKES 2 1/2 DOZEN MADELEINES

LARGE MADELEINE PAN (3 X 1 1/4-INCH SHELL MOLDS), SPRAYED

WITH NONSTICK BAKING SPRAY WITH FLOUR (E.G., PAM

WITH FLOUR OR BAKER’S JOY)

1 (18.25-ounce) package white cake mix

1/2 cup (1 stick) butter, melted

1/4 cup orange juice

4 large eggs, separated

1 tablespoon grated orange peel

2–3 tablespoons confectioners’ sugar

1. Beat the cake mix, melted butter, orange juice, egg yolks, and orange

peel in a large bowl with an electric mixer on medium speed 1 to 2

minutes, until well blended and smooth. Clean beaters.

2. Beat the egg whites in a separate large bowl with electric mixer on high

speed until soft peaks form. Stir 1/4 of egg whites into cake batter, then

fold in remaining whites.

3. Spoon 1 heaping tablespoon batter into each indentation in pan (do not

overfill; batter will spread as it bakes).

4. Bake 8 to 10 minutes until puffed and set at center. Cool in pan 5

minutes, then gently remove madeleines to wire rack. Repeat process

with remaining batter. Sift confectioners’ sugar over cooled cookies.
