Transfer pan to a wire rack and cool completely. Cut into bars or squares.

RASPBERRY ROCKY ROAD BARS

Rocky road is a favorite flavor combination, but I love to tweak the classics.

Hence, these newfangled bars, which have become one of my most requested

cookies.

PREHEAT OVEN TO 350°F

MAKES 3 DOZEN BARS

13 x 9-INCH BAKING PAN, GREASED OR LINED WITH FOIL (SEE

PAGE 16)

1 1/2 cups pecans, divided

1 (18.25-ounce) package white cake mix

1 cup (2 sticks) butter, melted

2 1/4 cups quick-cooking oats

1 (12-ounce) jar seedless raspberry jam

4 cups miniature marshmallows

1 1/2 cups semisweet chocolate chips

1. Coarsely chop 1/2 cup of the pecans. Place the chopped pecans, cake

mix, and melted butter in a large bowl. Blend for 1 to 2 minutes with

electric mixer on medium speed until blended. Stir in the oats with

wooden spoon. Press half of mixture into prepared pan.

2. Spoon the jam over crust, carefully spreading to cover. Sprinkle with the

marshmallows, remaining 1 cup pecans, and chocolate chips. Top with

the reserved oat mixture, pressing down gently.
