1/2 cup (1 stick) butter, melted

3 large eggs

2 (8-ounce) packages cream cheese, softened

3/4 cup confectioners’ sugar, divided

1 1/2 tablespoons instant coffee powder, dissolved in 1 tablespoon water

1 (16-ounce) container (2 cups) sour cream (not reduced fat)

1. Mix the cake mix, butter, and 1 egg with electric mixer on low speed

until blended. Press into prepared pan. Bake 10 minutes.

2. Beat the cream cheese and 1/2 cup of the confectioners’ sugar in large

bowl with electric mixer on high speed until blended and smooth. Add

the remaining 2 eggs mixing on medium-low speed until just blended.

Spread over hot crust.

3. Bake 22 to 25 minutes or until center is just barely set when pan is

jiggled (do not overbake).

4. Whisk the sour cream and remaining 1/4 cup confectioners’ sugar in a

medium bowl until smooth. Spread evenly over bars. Return bars to oven

for 5 minutes. Transfer to wire rack and cool completely. Chill at least 4

hours or overnight. Cut into bars.

VIENNESE ALMOND TEACAKES

My favorite coffeehouse back home in Berkeley, California, serves a moist, dense

almond cake that I love. This very easy version comes very close to replicating

the original. An added bonus is that these bars keep and travel extremely well.

The almond filling (not to be confused with almond paste or marzipan) can be

found in the baking section of most supermarkets, alongside the fruit pie fillings.
