armonía wine and dine<br />
agua dulce, elemento vital para sobrevivir los largos viajes de<br />
conquistadores y piratas. por aquellos tiempos, uno de los desafíos<br />
de los viajes marítimos era contar con una provisión<br />
adecuada de líquido que alcanzara para toda la travesía desde<br />
europa hasta el nuevo mundo. las bebidas más fácilmente<br />
disponibles eran el agua y la cerveza. Ya bien andado<br />
el viaje, entre ellas no había mucha diferencia: el agua,<br />
que se guardaba en barricas, se estropeaba rápidamente<br />
por proliferación de algas, y la cerveza –sin las técnicas<br />
de elaboración actuales– se agriaba. por ello, tripulación<br />
y pasajeros bebían primero la cerveza, dejando el<br />
agua para el final. entonces, para hacerla más gustosa,<br />
le agregaban restos de cerveza, vino o cualquier otro<br />
saborizante.<br />
al llegar a las primeras islas del Caribe, los navegantes<br />
adquirían un subproducto del procesamiento<br />
de la caña de azúcar, que era una especie de jarabe,<br />
ideal para darle mejor gusto al agua. Cuando esta<br />
melaza dulzona fermentaba, producía de manera<br />
natural una bebida alcohólica que, según se cuenta,<br />
era intoxicante, áspera, incluso desagradable y<br />
de aroma nauseabundo. pero, sin duda, entonaba<br />
los espíritus de los marineros, haciéndolos olvidar<br />
las penas, al punto de llamarla kill devil, es<br />
decir, “mata diablo”. Con el tiempo, esta bebida<br />
empezó a conocerse como ron (o rum, en inglés),<br />
y desde 1655 reemplazó oficialmente las<br />
raciones de cerveza en los barcos de la marina<br />
británica.<br />
EN LA GASTRONOMÍA<br />
Claro que mucha agua ha corrido bajo los<br />
barcos desde entonces, y el ron es hoy un<br />
destilado que se elabora con altísimos estándares<br />
de calidad, que nada tienen que<br />
ver con sus inicios. entretanto, no sólo se<br />
ha apropiado de la escena de la coctelería,<br />
sino que también amenaza con<br />
invadir el ámbito de la gastronomía de<br />
mantel largo. porque su capacidad de<br />
amalgamarse con distintos jugos o bebidas<br />
lo convierte en un trago ideal<br />
para quienes quieran acompañar sus comidas<br />
con otra cosa que no sea el tradicional vino.<br />
recientemente estuvo en Chile el ingeniero químico luis Figueroa,<br />
maestro ronero y experto mezclador de ron pampero, empresa venezolana<br />
que en 2008 está celebrando los 70 años desde su fundación<br />
por alejandro Hernández. este fue un empresario audaz y progresista,<br />
todo un personaje en su país, que incluso llegó a ser candidato a la presidencia.<br />
aparte de vincularse con la elaboración del ron, se dedicó intensamente<br />
al desarrollo de la agricultura y la industria de su país. Cultivó<br />
diversas verduras y frutas que luego enlató o utilizó para saborizar licores<br />
y vinos espumosos. en los años ’90, Hernández vendió pampero a la<br />
empresa tamayo y Cía., que la llevó a un liderazgo en la región. Hoy, en<br />
manos de diageo, la marca continúa su desarrollo, llegando a más de 40<br />
países en todo el mundo.<br />

Upon arrival at the first islands of<br />
the Caribbean Sea, sailors bought a<br />
by-product of sugar cane processing, a<br />
sort of syrup they used to improve the<br />
water flavor. When this sweetish molasses<br />
fermented, it naturally produced an alcoholic<br />
beverage that, legend has it, was intoxicating,<br />
even disgusting and with a nauseous taste.<br />
However, it lifted the spirits of sailors, making<br />
them forget their pains and sorrows. Hence<br />
the name given to it: kill devil. With time, the<br />
drink came to be known as rum, replacing the<br />
provisions of beer onboard the british royal fleet as<br />
early as 1655.<br />
CULINARY APPLICATIONS<br />
Times have undoubtedly changed, and today rum is a<br />
distillate produced with the highest quality standards<br />
available. in the meantime, rum has not only taken<br />
the cocktail scene by storm; it also threatens to invade<br />
the realms upscale dining too. its astounding capacity<br />
to blend with different juices or beverages makes it the<br />
ideal drink for those who want to pair their meals with<br />
something other than wine.<br />
The chemical engineer Luis Figueroa, rum master and<br />
expert blender at venezuelan rum house ron Pampero,<br />
which is celebrating its 70th anniversary, was recently in<br />
Chile. ron Pampero was founded by the audacious and<br />
visionary Alejandro Hernández, a national personage<br />
in that even ran for president of venezuela. besides his<br />
involvement in the rum industry, he also devoted a great<br />
deal of his efforts to the up-scaling of his homeland’s<br />
agriculture and industry. He grew several fruits and<br />
vegetables that he later canned or used to flavor liquors<br />
and sparkling wines. in the 1990s Hernández sold Pampero<br />
to Tamayo y Cía, the firm that catapulted it to its current<br />
commanding position in the region. Today, the company<br />
continues to grow under its current owner Diageo, with<br />
exports to over 40 countries worldwide.<br />
During his visit to Chile, Figueroa referred to the<br />
interesting production process of this rum, giving hints<br />
to pair each variant of this distillate with high-end dishes.
