Pasear un domingo cualquiera<br />
por el barrio san telmo en<br />
buenos aires es una experiencia<br />
imprescindible. la fauna humana<br />
es tan variopinta, desestructurada<br />
y colorida que representa con<br />
asombrosa fidelidad la cultura<br />
posmoderna. entre músicos, artesanos<br />
y payasos, entre ferias de<br />
antigüedades, tiendas muy chic<br />
y gastados adoquines, el tiempo<br />
transcurre mansamente, sin apuro,<br />
como si la vida no fuera otra<br />
cosa que dejarse llevar. en una<br />
concurrida esquina se encuentra<br />
un café resto llamado chez. dos<br />
parejas patiperras alsacianas, corinne<br />
y Paul gillet, y david Helf<br />
y olivier Hoffmann, decidieron<br />
instalarse en el barrio y ofrecer<br />
sus tradicionales recetas de niñez.<br />
Probamos una encremada cassolette<br />
d’escargot (caracoles trozados<br />
y servidos en un cacharro de<br />
greda), un perfumado y correcto<br />
tartare de saumon y unas soberbias<br />
tripes de mon ami renaud.<br />
en buen chileno, las guatitas de<br />

chilena<br />
está a tiro de metro. en la<br />
estación militar, a un costado del<br />
imperecedero omnium. si no<br />
le queda a la pasada, bien vale<br />
la pena darse una vuelta por la<br />
Fuente chilena. este proyecto del<br />
toque blanche álvaro barrientos,<br />
y su mujer maría Jesús Portales,<br />
hace justicia a nuestra gran cultura<br />
sanguchera. ante la tradición<br />
de las fuentes alemanas y suizas,<br />
este proyecto criollo refresca y viste<br />
algunos clásicos de la cocina popular.<br />
comenzamos con unas sabrosas<br />
y gentiles empanadas fritas<br />
de pino ($800). luego le hincamos<br />
el diente a un sánguche de mechada<br />
con palta y tomate ($3.150), a<br />
una fricandela de waygú y a una<br />
insuperable lengua ($2.500). estaba<br />
solita, pero su elocuencia<br />
superó con creces nuestras expec-<br />
renaud simplemente estaban<br />
para chuparse los dedos. todo esto<br />
acompañado por un muy buen espumoso<br />
rosado trumpeter extra<br />
brut (increíblemente no hay vinos<br />
alsacianos en la carta). la amabilidad<br />
de corinne, y ese aire casero<br />
donde los niños corren entre las<br />
mesas y comparten las tareas de<br />
sus padres, enamoran a primera<br />
vista, incluso antes de probar bocado.<br />
la cuenta, alrededor de $45 mil<br />
(incluyendo el discutido derecho a<br />
cubierto). más que razonable.<br />

plain english, renaud’s tripe was<br />
finger-licking good! We married<br />
all those delicious preparations<br />
with an outstanding rosé sparkler,<br />
propuesta popular y de calidad<br />
como ésta (conceptos que<br />
no siempre van de la mano).<br />
buena materia prima, recetas<br />
clásicas pero preparadas con<br />
una técnica depurada y un lugar<br />
nada, nada de pretencioso.<br />
aquí reina la sencillez, la alegría<br />
y las irrefrenables ansias<br />

can’t miss Fuente Chilena.<br />
even if not on your way, you<br />
may want to go check it up.<br />
This initiative by Toque blanche<br />
Chef Álvaro barrientos, and his<br />
wife, María Jesús Portales, is a true<br />
icon of our sandwich-worshiping<br />
culture. Given the tradition of<br />
German and Swiss fast food<br />
restaurants, this typically Chilean<br />
project is a refreshing proposal<br />
Trumpeter extra brut (funnily<br />
enough, there were no Alsatian<br />
bottlings in their wine list).<br />
Corinne’s kindness and that cozy<br />
environment where kids run thru<br />
the tables and share chores with<br />
their parents, make you fall deeply<br />
in love with the place, even before<br />
your first bite. The bill was USD<br />
69.00 (including the controversial<br />
cover fee). More than reasonable,<br />
don’t you think?<br />

for our local cuisine. For starters,<br />
tasty fried beef empanadas<br />
(USD 1.20). Then, a juicy beef,<br />
tomato and avocado sandwich<br />
(USD 4.80), a Waygu burger and<br />
an unmatchable beef tongue<br />
(USD 3.80) sandwich, just plain,<br />
but beyond our expectations.<br />
All sandwiches are served in a<br />
light burger bun that helps your<br />
peace of mind but makes it a bit<br />
cumbersome to grab them. Good<br />
beer, coffee and highly inspired<br />
desserts, like a flan topped with<br />
warm caramel. We were due for<br />
a popular, good-quality sandwich<br />
eatery like this, for as unusual<br />
as it may sound. Good raw<br />
materials, classic, unpretentious<br />
recipes but prepared by skilled<br />
hands. Simplicity, joyfulness and<br />
indulgence are the name of<br />
Fuente Chilena’s game!<br />
