“Sapori del Ticino in tavola”, or the flavours of the Ticino table, is a project that aims to promote the knowledge and<br />
consumption of typical regional products through restaurants. The initiative is run by the Conferenza Agroalimentare and<br />
supported by GastroTicino.<br />
With over 1,600 members, GastroTicino is the largest<br />
association of shopkeepers and hoteliers in the Canton<br />
of Ticino. Presided over by Marco Huber and managed<br />
by cantonal secretary Gabriele Beltrami, it is part of GastroSuisse,<br />
which combines 26 cantonal branches and brings together a further<br />
21,000 members. The purpose of GastroTicino is to defend the<br />
interests of its members, and to promote and improve the image<br />
and quality standards of the profession and its individual associates.<br />
The Federation provides a wide range of professional services to its<br />
own members: a legal office, a press and PR office (through the<br />
magazines Il Caffè and Ristora Magazine, and the portals ristoranti.ch<br />
and gastroticino.ch), a professional training office, hotel rankings,<br />
etc. GastroTicino also has a mandate from the State to organise<br />
courses at the Scuola Esercenti catering college for the industry’s<br />
certificate of professional proficiency.<br />
Its current projects also include the “Sapori del Ticino in tavola”<br />
initiative, or “flavours of the Ticino table”. As Mattia Manzocchi,<br />

producers and products of Ticino are<br />
promoted in an attractive pocket guide.<br />
