Der Räucherlachs als
Beilage passt ausgezeichnet
und wir
erfahren von Andreas, dass
hier mit Weisswein, selbstgemachter
Brühe, Sahne,
Kräutern und natürlich
Zucchini gearbeitet wurde.
Weiter geht es mit dem Wildschweingulasch.
Ich liebe
“Reinhauessen” und ich muss
mich wirklich zügeln - der
Testtag ist noch lang und bin
sowieso auf Diät…mit Ausnahmen
selbstverständlich
:-) Man bekommt ja auf Gran
Canaria schon manchmal
gemischtes Wildgualsch geboten,
aber ich ziehe reines
Wildschweingulasch vor, da
es viel saftiger ist.
Jetzt freue ich mich ganz besonders
denn natürlich ist
MonteCristo ein französisch
geprägter kulinarischer Ort
und dazu gehört Foie Gras.
Gerade erst eine Woche zuvor
hatte ich in einem italienischen
Restaurant die Gänseleber
probiert und auch vor
einigen Tagen kostete ich in
einem Schweizer Restaurant
dieses französische Kulturgut.
Beide Male sehr schmackhaft,
aber nichts gegen das Dreierlei
von Foie Gras, wie Andreas
Dacke es zubereitet. Auf dem
Teller angerichtet wird neben
einer klassisch gebratenen
Foie Gras auch eine Mousse
von derselben, sowie ein oeuf
cocotte foie gras. Bei letzterem
handelt es sich um ein
Ei im Glas mit Kräutern und
Gänseleber - ein Traum.
Aber die Höhepunkte nehmen
nicht ab. Der zarte Pulpo, den
ich nun probiere, erinnert
mich und meinen Gaumen an
unsere erste Muy Bien Ausgabe.
Damals testeten wir
das 928 in San Agustín und
hatten zuvor und danach nie
wieder ein so leckeres Pulpo
Erlebnis. Hier treffe ich auf
einen ebenbürtigen Meister.
On Gran Canaria you can
sometimes get mixed
wild goulash, but I prefer
pure wild boar goulash,
because it is much juicier.
Now I am very happy, because
of course MonteCristo
is a French influenced culinary
place and Foie Gras
belongs to it. Just one week
before I had tried goose liver
in an Italian restaurant and
also a few days ago I tasted
this French cultural asset
in a Swiss restaurant. Both
times very tasty, but nothing
against the trio of foie gras as
Andreas Dacke prepares it. On
the plate is a classic fried foie
gras, a mousse of the same
and an oeuf cocotte foie gras.
The latter is an egg in a glass
with herbs and goose liver -
a dream.
But the highlights are not diminishing.
The delicate pulpo
I am now tasting reminds
me and my palate of our first
Muy Bien edition. Back then
we tested the 928 in San
Agustin and never had such
a delicious Pulpo experience
before or since. Here I finally
meet an equal master.
While I am rehearsing and
taking pictures, I get into conversation
with a young couple
who are sitting in love at one
of the romantic single seats.
I let them taste some of my
test dishes and at the Pulpo
I am amazed. The initial concern
for a consistency ala
squid or even a fishy taste
does not prove true for the
two of them. Such an octopus
is something completely
different. Unfortunately I
can only try two forks again -
there is still a lot to do. With
the vegetable quiche I have
in front of me I don’t want to
waste my last precious free
space in my stomach. Vegetarian
food is not really mine but
quite honestly - I have to bite
off more often here, too. Juicy,

y realmente tengo
que controlarme, el día
del examen aún es largo y estoy
a dieta de todos modos...
con excepciones por supuesto
:-) En Gran Canaria a veces se
puede conseguir gulasch silvestre
mezclado, pero yo prefiero
el gulasch puro de jabalí,
porque es mucho más jugoso.
Ahora estoy muy feliz, porque
por supuesto MonteCristo es
un lugar culinario de influencia
francesa y el Foie Gras
pertenece a él. Una semana
antes había probado el hígado
de ganso en un restaurante
italiano y también hace unos
días probé este bien cultural
francés en un restaurante
suizo. Ambas veces muy sabroso,
pero nada en contra del
trío de foie gras como lo prepara
Andreas Dacke. En el plato
hay un foie gras frito clásico,
una mousse del mismo y
un foie gras de oeuf cocotte.
Este último es un huevo en un
vaso con hierbas e hígado de
ganso, un sueño.
Pero las luces no disminuyen.
El delicado pulpo que estoy
probando ahora me recuerda
a mí y a mi paladar de nuestra
primera edición de Muy Bien.
En aquel entonces probamos
el 928 en San Agustín y nunca
tuvimos una experiencia tan
deliciosa con el Pulpo antes
o después. Aquí finalmente
conozco a un maestro igualitario.
Mientras ensayo y saco fotos,
entro en conversación con
una joven pareja que está
sentada enamorada en uno
de los románticos asientos
individuales.
Les dejé probar algunos de
mis platos de prueba y con
el Pulpo estoy asombrada. La
preocupación inicial por una
consistencia a la calamar o
incluso un sabor a pescado
no resulta ser cierto para los
dos.
