In Brasilien sowie in den ehemaligen
portugiesischen Provinzen in Afrika und
Asien sowie in Portugal ist Bacalao das
Hauptgericht in der Nacht vom 24. Dezember auf
Weihnachten und wird normalerweise nach dem
Tintenfisch und vor dem Truthahn serviert. Am
nächsten Tag wird die “alte Kleidung” zubereitet,
die vom Kabeljau der vorherigen Nacht übrigbleibt.
Das Gericht wird mit Rüben, Petersilie,
Knoblauch, Olivenöl und zerkleinerten Kartoffeln
überbacken. Überhaupt ist Portugal wohl DAS
Land des Bacalao und ein verbreitetes Sprichwort
sagt, dass es 365 verschiedene Rezepte
gäbe – für jeden Tag des Jahres eines.
Auch die Italiener mögen den salzigen Fisch.
Die Venezianer etwa kochen ihn in Milch und
Olivenöl drei Stunden auf kleiner Flamme. In
Genua aber wird er mit Kartoffeln, Oliven, Pinienkernen
und einer leichten Tomatensoße serviert.
In Italien sowie Kroatien wird Bacalao zudem
auch als Brotaufstrich gereicht.
In Skandinavien mögen sie fein aufgeschnittenen
und vom groben Salz befreiten Klippfisch
auch roh. Die Isländer geniessen 1-2 mm dünne
Fäden vom Fleisch zusammen mit Butter.
Und natürlich kocht man auch auf Gran Canaria
mit Bacalao wie z.B. im Tapas Restaurant Comoquieras
in Playa del Ingles. Die Kroketten dort
sind mit diesem tollen Fisch gefüllt und werden
in einem kleinen Dorf der Insel hergestellt.
Sie möchten selber einmal Bacalao zubereiten?
Achten Sie auf die Farbe. Gute Qualität ist weiss,
während andere Farben wie Gelb ein Zeichen für
Probleme während der Trocknung sind.
Auch das pinke “Kabeljaurot” kommt häufiger vor
und ist auf das Vorhandensein von halophilen
Bakterien zurückzuführen, die sich in Umgebungen
mit Salzkonzentrationen von bis zu 10%
vermehren können. Ist das Fleisch bräunlich, ist
ein Schimmelpilz am Werke gewesen.
Nach diesem Schreiben läuft mir mittlerweile das
Wasser im Mund zusammen und mein Jagdtrieb
wird geweckt. Ich freue mich schon auf meinen
Deutschlandbesuch, wenn ich mit
meinem Freund Sascha endlich
mal wieder raus auf
die Ostsee fahre, um
Bacalao zu angeln.

Pay attention to the colour. Good quality
is white, while other colours like yellow

process.

Los islandeses disfrutan de hilos de carne de
1 a 2 mm de grosor junto con la mantequilla.
Y por supuesto también cocinan con bacalao
en Gran Canaria, por ejemplo en el restaurante
de tapas Comoquieras en Playa del Inglés.
Las croquetas allí están llenas de este
gran pescado y se producen en un pequeño
pueblo de la isla.
¿Le gustaría preparar el bacalao usted mismo?
Presta atención al color. El blanco es de buena
calidad, mientras que otros colores como
el amarillo son un signo de problemas durante
el proceso de secado.
El “rojo bacalao” rosa también es más común
y se debe a la presencia de bacterias halófilas
que pueden multiplicarse en ambientes
con concentraciones de sal de hasta el 10%.
