Vegetables and fruits appropriate for demonstrations<br />

<strong>of</strong> various types <strong>of</strong> food preservation are listed below with<br />

their approximate time <strong>of</strong> harvest.<br />

A. Gooseberries - (last week in June through first week<br />

in July)<br />

1. Preserve in bottles.<br />

2. Preserve as jam.<br />

3. Cook a gooseberry pie.<br />

B. Apricots - (end <strong>of</strong> June through first weeks in July)<br />

1. Use them in jam/jelly.<br />

2. Preserve fruits while still green.<br />

3. Dry them in the sun.<br />

4. Ferment them for brandy.<br />

C. Peaches (middle <strong>of</strong> July through last <strong>of</strong> August)<br />

1. Dry them in the sun.<br />

2. Preserve as jam/jelly.<br />

3. Ferment for brandy.<br />

D. Apples (end <strong>of</strong> June through September, depending on<br />

cultivar/variety)<br />

1. Sun dry them.<br />
