peristaltic contractions are coordinated by the au<strong>to</strong>nomic nervous system. In this<br />

manner, a bolus of food is pushed along from the esophagus in<strong>to</strong> the s<strong>to</strong>mach,<br />

where the food is mixed with hydrochloric acid, mucus, and digestive enzymes. A<br />

<strong>to</strong>tal of about 3 L/d of these fluids is secreted by the interior lining of the s<strong>to</strong>mach.<br />

The contents of the s<strong>to</strong>mach are thoroughly mixed by peristaltic contractions of the<br />

s<strong>to</strong>mach walls <strong>to</strong> produce a relatively homogeneous fluidized mass called chyme. The<br />

mean residence time of the gastric contents is about 1 hour. The chyme is propelled<br />

<strong>to</strong> the small intestine by these peristaltic contractions. Passage from the s<strong>to</strong>mach<br />

<strong>to</strong> the intestine is through an opening called the pylorus. The size of the pyloric<br />

opening is controlled by a circumferential muscle called the pyloric sphincter. Chyme<br />
