B. VEGA Project No 1/9133/02 Development and control of new food technologies and<br />
application of biological active components into foods to increase their quality according to<br />
criteria used in EU (Alexander Dandár)<br />
The growth of population leads to increased demands in food production with higher quality and durability. The<br />
modern trends in new food technologies are characterized with increased productivity, durability and nutritive<br />
value of produced foods. This is closely connected with the development and optimalization of basic<br />
physicochemical and biochemical processes used from raw material to final products. These trends are topical all<br />
over the world preferred by advanced national and multinational institutions. In our country there are demands<br />
mainly defined by EU. Proposed project builds on the research have been solved in the last years at our<br />
department to develop gained results.<br />
The main goals of the project are:<br />
1/ development and modification of progressive technological procedures in utilization of cereals and nontraditional<br />
pseudocereals (amaranth)<br />
2/ application of natural substances to improve the food quality; i.e. natural antioxidants, stabilisers and<br />
substances with preventive effect on humans.<br />
3/ utilization of microelements and other biologic important substances in raw materials and final products.<br />
4/ using of lactic fermentation as a conservation method to produce semi- and final products.<br />
5/ application of new liming agents without toxic compounds. Study of colorants formation and their elimination to<br />
improve sugar quality.<br />

C. VEGA Project No. 1/3546/06 Monitoring and prevention of creation of biogenic amines to<br />
ensure food quality and safety ( Karovičová Jolana)<br />
Monitoring of occurrence of biogenic amines in plant and animal foods. Study of effect of model conditions<br />
(temperature, pH, content of NaCl, NaNO 3 and preservatives) on the growth and production of biogenic amines by<br />
both contaminating bacteria and starter cultures. Evaluation of inhibition effect of probiotic bacteria and starter<br />
cultures on contaminants originating from raw materials (estimation of biogenic amines and organic acids).<br />
Selection of starter cultures and bacteria employed in dairy and meat technology characterised by production of<br />
bacteriocins and/or low production of biogenic amines. Use of multistatistic variation methods for evaluation of<br />
microbiological and chemical analyses for prediction of occurrence of biogenic amines and behaviour of<br />
microorganisms in model conditions and in food products.<br />

Explanation of molecular mechanism´ effects of selected antioxidants and free radical scavengers in the<br />
determinated conditions. In our stages are searched the effective transdermal vehicles for delivery antioxidants<br />
and free radical scavengers and theirs profylactive effects against oxidative stress on the topical applications.<br />
