Grünkohl klassisch Zutaten: 1,5 kg Grünkohl, 3 EL Schmalz, 2 Zwiebeln, 2 EL Hafergrütze, Salz und Pfeffer, Zucker, Fleischbrühe, 5 Koch - würste, 5 Pinkelwürste, 250 g geräucherter Speck, 4 Scheiben Kasseler Classic kale Ingredients: 1.5 kg kale, 3 tbsp lard, 2 onions, 2 tbsp oat groats, salt and pepper, sugar, meat stock, 5 boiled sausages, 5 “pinkel” sausages, 250 g smoked bacon, 4 slices “kassler” (cured pork) Zubereitung: Blätter vom Grünkohl lösen, waschen und abtropfen lassen. Dann den Grünkohl mit kochendem Wasser überbrühen und grob hacken. Die Zwiebeln klein schneiden und in heißem Schmalz andünsten. Grün kohl, Hafergrütze und Gewürze darauf schichten, Brühe hinzufügen und etwa zehn Minuten kochen lassen. Gut durchschütteln. Kasseler und Speck hinzugeben und in einem fest verschlossenen Topf zwei bis drei Stunden schmoren. Pinkel und Koch - würste nach etwa 90 Minu ten hinzugeben. Zum Schluss Fleisch und Würste herausnehmen. Grünkohl in einer Schüssel, Fleisch auf einer Platte servieren und dazu Salz - kartoffeln reichen. Instructions: Remove the leaves from the kale, wash and leave to drain. Then pour boiling water over the kale leaves and roughly chop them. Chop the onions and lightly fry in hot lard. Add layers of kale, oat groats and seasoning, add the stock and leave to cook for about ten minutes. Toss well. Add “kassler” and bacon and stew for two to three hours in a saucepan with the lid on firmly. Add “pinkel” and boiled sausages after about 90 minutes. When cooked, remove the meat and sausages. Put the kale in a bowl and the meat on a plate and serve with boiled potatoes. 220 Sniertjebraten Zutaten: 500 g Schweinenacken, 500 g Schweineschulter, 1 TL Senf, Salz, Pfeffer, Paprikapulver, 1 Zwiebel, 0,5 l Brühe, 10 g ausgelassene Speckwürfel, 300 g Kartoffeln, Mehl, Ei, Paniermehl Zubereitung: Schweineschulter und -nacken kleinschneiden, mit Senf und Gewürzen kräftig einreiben und über Nacht ziehen lassen. Am nächsten Tag von allen Seiten kräftig anbraten. Danach mit etwas Brühe im eigenen Saft rund 40 Minuten schmoren. Zwiebelringe schneiden, panie - ren und in Fett frittieren. Kartoffeln kochen, in Scheiben schneiden und in der Pfanne mit etwas Fett, Speck und Zwiebelringen knusprig braten. Als Gemüse eignen sich Rotkohl, Kürbis und Rote Bete. “Sniertjebraten” (roast pork) Ingredients: 500 g neck of pork, 500 g shoulder of pork, 1 tsp mustard, salt, pepper, paprika, 1 onion, 0.5 l stock, 10 g fried diced bacon, 300 g potatoes, flour, egg, breadcrumbs Instructions: Cut the meat into small pieces, season thoroughly by rubbing in the mustard and spices and leave to stand overnight. On the next day, brown the meat thoroughly on all sides. Then braise in its own juices with a little stock for around 40 minutes. Cut the onion into rings, coat with breadcombs and fry in fat. Cook and slice the potatoes and fry until crispy in a little fat with the bacon and onion rings. Can be served with red cabbage, pumpkin and beetroot. Brataal mit Bratkartoffeln Zutaten: 1 kg Kartoffeln, 1,2 kg Aal, 160 g Speck, 120 g Zwiebeln, Salz, Pfeffer, Paprika, Mehl, Butter Zubereitung: Die Kartoffeln mit Schale kochen, abkühlen lassen und abpellen, dann in Scheiben schneiden. Speck und Zwiebeln würfeln und anschließend mit den Kartoffelscheiben braten. Mit Salz, Pfeffer und Paprika würzen. Bräunungsgrad nach Wunsch. Den Aal in Stücke schneiden, salzen, in Mehl wenden und in reichlich Butter von allen Seiten knusprig braun braten. Fried eel with fried potatoes Ingredients: 1 kg potatoes, 1.2 kg eel, 160 g bacon, 120 g onions, salt, pepper, paprika, flour, butter Instructions: Cook the potatoes in their skins, leave to cool, peel and cut into slices. Dice bacon and onions, then fry with the sliced potatoes. Season with salt, pepper and paprika. Brown to taste. Cut the eel into pieces, salt the eel, turn it in flour and fry in butter on all sides until brown and crispy.
