How to prepare<br />

Most recipes call for the creature to be skinned. If your eel<br />

is from a fishmonger, you can get them to undertake this.<br />

How to cook<br />

Eel is quite rich, because its fat content is pretty high. The<br />

best methods of cooking are those that get some of the fat<br />

out. Grilled eel is particularly delicious. Try rolling in salt<br />

and pepper and grill over an open fire.<br />

Varieties<br />

Freshwater eels tend to live alongside the coast, in rivers,<br />

and lakes. For those familiar with Japanese cuisine, this<br />

variety is known as ‘unagi’. Saltwater eels are known by<br />

the Japanese name of ‘anago.’<br />

Nutritional value<br />

Rich in vitamins A, D, and B12, and they offer good<br />

amounts of protein and omega-3.<br />
