palaces life Symphony for four hands at Le Panorama THE NEW SEASON AT THE ROYAL RIVIERA IS HERALDING SOMETHING OF A REVOLUTION. The hotel has long been celebrated for its stunning location on the Baie des Fourmis (the Bay of Ants) at the entrance to the Cap Ferrat; for its fine sand beach, a rarity in these parts; for the outstanding, almost familial welcome; and its serene tranquility amid the tumult of the Côte d’Azur. But the Royal Riviera is also a renowned gastronomic venue with a name inherited from the enviable view it enjoys across the bay – Le Panorama. The restaurant has long been in the highly skilled and talented hands of Breton chef Bruno Le Bolch, but the 2012 season sees him joined at the helm by Nice native, chef Alain Parodi. Together, they have created a menu that is a ‘four-handed’ symphony of Mediterranean flavours – a culinary pas-de-deux, the fragrant air of Provence mingling with the northerner’s briny maritime breeze. The two chefs titillate the palates of their guests by reinventing the classics with playful contrasts and combinations and parading a veritable carnival of this southern region’s best seafood, vegetables, and fruit across their plates. Throughout an eminently seductive selection of dishes, where crab meets celeriac and grapefruit, the saffron risotto flirts with langoustines, and cod rubs elbows with chorizo, one continually notes the influence of one or other of the chefs’ regional origins. Theirs is an avalanche of flavours that variously comforts and surprises, and feeds a desire to return as often as necessary to taste everything on the menu. In offering substantial yet exceedingly affordable menus, the Panorama has widened its clientele to include both business lunches and romantic interludes. The Sunday brunch includes the additional pleasure of access to the hotel’s swimming pool and delightful wellness centre. A timeless, palatial sanctuary with quality of service and ingredients the equal of its Michelin-starred neighbours. On connaît l’hôtel pour sa situation au cœur de la Baie des Fourmis, à l’entrée du Cap-Ferrat, pour sa plage privée de sable fin, rare dans la région, pour son accueil unique, presque familial et son calme au beau milieu du tumulte de la Côte d’Azur en été. Mais le Royal Riviera, c’est également un restaurant gastronomique qui, grâce à sa vue sur la Baie des Fourmis et la Méditerranée a hérité d’un nom évocateur : le Panorama. Jusqu’à présent, ce lieu était tenu par un chef discret et talentueux : Bruno Le Bolch. Pour cette nouvelle saison 2012, l’iode des embruns bretons se mêle désormais avec l’odeur des pins de la Méditerranée puisque le chef niçois Alain Parodi est venu “mettre son grain de sel” dans les cuisines du chef “résident”. C’est ainsi que le breton et le niçois ont composé pour cette nouvelle saison 2012 une carte à quatre mains en orchestrant la symphonie des saveurs méditerranéennes. Les deux chefs jouent avec les contrastes, associent les douceurs, réinventent les classiques, font défiler dans l’assiette les fruits et légumes du sud, s’amusent avec les produits de la mer pour le plus grand bonheur des papilles des convives de la Table du Royal. Outre des créations intensément séduisantes, il est intéressant de voir ressortir ici ou là les influences culinaires et la culture régionale de chacun de ces deux chefs si différents mais qui se montrent si complémentaires dans l’assiette. Le tourteau rencontre le pamplemousse et la sucrine, le risotto au safran flirte avec les langoustines et le cabillaud joue des coudes avec le chorizo. C’est une avalanche de saveurs connues ou étonnantes qui se déclinent sur une carte qui ne donne qu’une envie : goûter à tout et revenir souvent. Avec des menus à des tarifs plus qu’abordables tout en restant très complets, le Panorama s’ouvre à une clientèle plus large pour des déjeuners d’affaires ou en amoureux, offrant un refuge “Palace” hors du temps avec la qualité de produits et de service d’un établissement étoilé.
