The cellar master at the Hotel Martinez in Cannes, is sommelier Dominique Vion.
Reserved and measured, he has been with the establishment since 2008 after
having learnt and practised his art in Paris, at the Negresco in Nice, and in his
native Côte d’Or at the heart of the Burgundy
region.
Passionate and perfectionist, Vion manages the
cellars and dining hall of the Martinez with the
profoundly human touch and excellence of service
that underpins everything he does.
Combining his great love of wine with the satisfaction
he derives from a job done well, this
fortysomething-year-old is faultlessly uncompromising
on the rules of his craft – the serving of
a wine at just the right temperature being as
imperative to him as are the discretion and efficiency
required of five star service. Rules that
must be followed to the letter so as to allow perfection
to occur in its own good time. Respect
for the customer, the service and the wine itself,
are the basis of his profession. More than a job,
he views his work as an art, and one which he
takes great pleasure in sharing with as many people as possible. It is in that
exchange with others, the chance encounters, that he often makes excellent new
discoveries, some grander than others, which accompany the dishes that feature
on Christian Sinicropi’s menu, and coming full circle, further add to the collection
of liquid gems with which to entertain his clientele.

générosité leur histoire.
Au Martinez, le maître de la cave est le sommelier
Dominique Vion. Réservé et mesuré il fait partie
de l’établissement depuis 2008 après avoir appris
et exercé son art à Paris, puis au Negresco
et surtout fait ses premières armes sur sa terre
natale, en Côte d’Or, au cœur de la Bourgogne.
Perfectionniste et passionné, M. Vion gère la salle
et la cave du Martinez dans un esprit de qualité
profondément emprunt de simplicité humaine où
l’excellence du service est au centre de tout.
L’amour du produit, du travail bien fait et le service
cinq étoiles sont des aspects de son métier sur
lesquels ce tout jeune quadragénaire refuse catégoriquement
de transiger, un vin servi à la température
juste étant aussi important qu’un service
discret et efficace. Pour lui, les règles de l’art
doivent être respectées à la lettre et la perfection
doit arriver, juste et simple, au bon moment. Plus
qu’un métier, la sommellerie est un art qu’il aimerait
faire comprendre au plus grand nombre. Respect des clients, des règles du service
et surtout respect des produits sont la profession de foi de Dominique Vion qui
déniche au gré des rencontres, des découvertes et de la carte du chef Christian
Sinicropi de nouveaux vins pour sa carte. Petits ou grands mais toujours excellents,
ces nouvelles références sont là pour satisfaire une clientèle à qui il aime faire
découvrir des petits bijoux en flacons.
