Le potager de <strong>Cala</strong> <strong>Rossa</strong> est tout simplement<br />
extraordinaire. Un paradis vert à quelques mètres des<br />
fourneaux qui magnifie les plats des chefs.<br />
L’architecte paysagiste Philippe Niez, poète des sens et des émotions,<br />
inspiré par la nature exaltée du bassin méditerranéen, a composé un<br />
jardin délicieusement sensuel et prolifique. Entourés de mimosas et de<br />
tamaris, les lavandes et figuiers côtoient herbes aromatiques, tomates,<br />
aubergines, roquettes, pois gourmands et mille autres... Le tout dans<br />
une démarche qui attire les insectes pollinisateurs, utilise la paille et<br />
le compost pour conserver la micro faune du sol et obtenir ainsi un<br />
potager totalement bio !<br />
La récompense est là car le jardin potager devient un formidable<br />
lieu de méditation et de découvertes. Ici poussent la mertensia<br />
maritima au goût d’huître, là le cucurma, le gingembre, les poivriers du<br />
séchuan, et tout au fond le cercle des agrumes, cédrats, combavas,<br />
limequats, mains de bouddha et les rares citrons caviar ou microcitrus<br />
australasica... Avant le coucher du soleil, apparaissent les commis,<br />
comme dans un rêve culinaire, pour cueillir fleurs de bourrache, erba<br />
barone, nepita, framboises et fraises des bois pour enchanter les<br />
créations des chefs de ces lieux.<br />

AT CALA ROSSA<br />
<strong>Cala</strong> <strong>Rossa</strong>’s vegetable garden is quite simply<br />
extraordinary. A green corner of paradise a few metres<br />
from the ovens entrusted with the chefs’ concoctions.<br />
A poet for the senses and emotions, landscape architect Philippe<br />
Niez, inspired by the uplifting nature in the Mediterranean region,<br />
has designed a delightfully sensual and prolific garden. Surrounded<br />
by mimosa and tamarisk, fig trees and lavender rub shoulders with<br />
aromatic herbs, tomatoes, aubergines, rocket salad, gourmet peas<br />
and much, much more... All benefiting from an approach attracting<br />
pollinating insects, using straw and compost to preserve the soil’s<br />
micro-fauna, and thus obtaining a totally organic vegetable garden!<br />
The rewards are already there, as it has become a wonderful place<br />
for meditation and discoveries. Here one finds mertensia maritima<br />
tasting of oysters, cucurma, ginger, Sechuan peppers and, at the very<br />
bottom, a circle of citrus trees, cedrats, kaffir limes, limequats, Buddha’s<br />
hands, and rare microcitrus australasica or caviar lemons... Before the<br />
sun goes down, kitchen assistants appear as if in a culinary dream, to<br />
pick borrage leaves, Corsican caraway thyme, nepita mint, raspberries<br />
and wood strawberries, to add their enchantment to wonderful dishes<br />
concocted by the chefs.<br />
