Asparagus by the Bundle from page 22<br />
ASPARAgUS FRITTeRS<br />
Makes 10<br />
2 tsp (10 ml) lemon zest, finely grated<br />
1 egg, lightly beaten<br />
¼ cup (50 ml) milk<br />
½ cup (125 ml) plain flour<br />
½ tsp (2 ml) baking powder<br />
¼ cup (50 ml) ricotta cheese<br />
¼ cup (50 ml) chives, finely sliced<br />
¼ cup (50 ml) fresh dill, chopped<br />
2 cups (500 ml) asparagus, blanched, chopped into 1-in pieces (2.5 cm)<br />
vegetable oil for cooking<br />
lemon wedges, to garnish<br />
In medium bowl, mix first 6 ingredients to make batter. just before frying, fold in<br />
chives, dill and asparagus. Heat heavy-bottomed pan with ¼-in (0.5 cm) of oil.<br />
Test drop of batter in oil, if it sizzles, oil is ready. Using 2 spoons, drop dollop of<br />
batter into oil, bringing together in a round shape. Serve with lemon wedge.<br />
