BARBeCUeD TeqUILA-LIme CHICKen WIngS<br />

Serves 4 as an appetizer<br />

wINGS<br />

3 lbs (1½ kg) chicken wings, split at joint and wing tips removed<br />

salt and freshly ground pepper<br />

Preheat oven to 350 F (180 C). Line rimmed baking sheet with parchment<br />

paper. Place wings on prepared baking sheet and season generously with salt and<br />

pepper. Bake wings, turning once, until golden brown, approximately 45 minutes.<br />

meanwhile, make Tequila-Lime marinade.<br />

TEqUILA-LIME MARINADE<br />

1 tbsp (15 ml) lime zest<br />

½ cup (125 ml) lime juice<br />

⅓ cup (75 ml) tequila<br />

3 garlic cloves, finely minced<br />

1 tbsp (15 ml) agave nectar or honey<br />

2 tbsp (30 ml) adobo sauce<br />

1 or 2 chipotle peppers in adobo sauce<br />

1 tsp (5 ml) ground cumin<br />

salt and freshly ground pepper<br />

While wings are cooking, in food processor fitted with the steel blade, blend lime<br />

zest, lime juice, tequila, garlic, agave nectar, adobo sauce, peppers and cumin until<br />

smooth. Season with salt and ground black pepper to taste. Place cooked wings in<br />

a bowl and toss with ¾ cup (175 ml) tequila-lime marinade, reserving remaining<br />

sauce. Let wings marinate for 30 minutes, tossing occasionally. While chicken<br />

wings are marinating, prepare dipping sauce.<br />

DIPPING SAUCE<br />

¼ cup (50 ml) remaining tequila-lime marinade<br />

½ cup (125 ml) cilantro leaves, washed and roughly chopped<br />

¼ cup (50 ml) mayonnaise<br />

¼ cup (50 ml) sour cream<br />

1 tbsp (15 ml) agave nectar or honey<br />

Whisk together remaining ¼ cup (50 ml) of reserved marinade, cilantro,<br />

mayonnaise, sour cream and agave nectar. Set aside. To finish, preheat barbecue<br />

and brush grill racks with oil. Remove wings from sauce and grill, turning<br />

occasionally, until warmed through. Remove to a platter. Serve with dipping sauce<br />

and sliced vegetables.<br />
