italian risotto is typically made with short-grained arborio rice.<br />
When stirred continuously while cooking, the rice grains<br />
release their starch and produce a smooth, luscious consistency.<br />
All risottos are made with the same technique and thus the dish<br />
can be easily adapted and varied depending on the flavours of<br />
the season. We have adapted the classic Veneto version with<br />
rice and peas and included snap peas and tender pea shoots.<br />
The seared scallop risotto is fresh and lively with a drizzle of<br />
olive oil, lemon juice and Szechuan peppercorns. The flavourful,<br />
roasted tomato, fennel and bok choy risotto makes<br />
