A Toast to Spring with Bc Wines<br />

tannins, the resulting wine is not red<br />

or white, but shades of pink. Generally<br />

tasting more like white wine, you can<br />

judge rosé by its colour. The lighter the<br />

pink, the lighter and fruitier the wine, so<br />

light pink rosés pair very well with the<br />

lighter dishes of spring.<br />

Pairing <strong>BC</strong> wines with spring foods<br />

is mostly straightforward, but one caveat:<br />

the quintessential ingredient of spring<br />

salads – vinegar-based dressing – can<br />

make pairing tricky. The basic rule is, if<br />

your dressing has more acidity than your<br />

wine, then your wine will taste dull or<br />

bland. Light wines with higher acidity<br />

(like Sauvignon Blanc or Rieslings) will<br />

stand up well to vinaigrette. Adding<br />

protein such as chicken or shellfish to a<br />

salad will also help tame the acidity of<br />

salad calls for an off-dry Riesling, with<br />

the crispness to balance the citrus and<br />

lime, sesame oil dressing and a touch of<br />

sweetness to harness the spice.<br />
