The term tapas evolved from the Spanish verb tapar, “to<br />
cover.” This is a reference to the historical practice of<br />
using a slice of cheese or ham to cover a glass of sherry<br />
to protect it from interloping fruit flies in hot Andalusian bars.<br />
From these modest beginnings came the tradition of serving small<br />
portions of bar food free with a glass of beer, wine or sherry.<br />
El tapeo or “tapas barhopping,” is a wonderful, wandering<br />
tradition that brings whole neighbourhoods in Spain out onto<br />
the streets to mingle, gossip, stroll and to have a drink or two<br />
with their beloved tapas. Tapas-style dining is not just to be<br />
enjoyed in restaurants. Armed with these recipes you can start a<br />
