If you’ve ever stepped out for a drink in this city, then<br />
you have probably happened upon a Donnelly Group<br />
establishment. The management company owns and operates<br />
many of Vancouver’s top pubs, nightclubs and social houses<br />
such as The Academic, Library Square, Republic and Granville<br />
Room. If you’ve ever enjoyed a cocktail at one of their many<br />
locations, then likely you’ve had one of Trevor’s creations.<br />
Trevor Kallies, Bar and Beverage Director of the Donnelly<br />
Group, is not only responsible for the beer and wine programs,<br />
employee training and quality control, but also heads the<br />
company’s cocktail development program.<br />
When Trevor is not creating contemporary cocktails for<br />
the Donnelly Group, this <strong>BC</strong>-born Bar Star keeps busy in local<br />
mixology competitions and bartending events. He recently<br />
participated in The Refinery’s “Cocktail Kitchen” series which<br />
concluded this February. In March, Trevor will be a cocktail<br />
apprentice in “Tales of the Cocktail on Tour,” a premiere<br />
annual cocktail festival previously held only in New Orleans.<br />
Tales of the Cocktail celebrates cocktail-forward individuals and<br />
establishments. Vancouver is the first stop on the competition’s<br />
inaugural tour. It’s a key indication that Vancouver is getting<br />
the recognition it deserves for its burgeoning cocktail culture.<br />
Trevor is proud of the Donnelly Group’s most recent<br />
venture, The New Oxford. Located in Yaletown, as the name<br />
would suggest, its theme is a nod to England’s prestigious<br />
Oxford University. The walls are adorned with colossal photos<br />
of famous Oxford alumni – Oscar Wilde, Bill Clinton and<br />
Margaret Thatcher. The walls of the back room “study” area are<br />
lined with scholarly books and other university memorabilia,<br />
complete with a shuffleboard table.<br />
Comfortably chic, The New Oxford is definitely worth<br />
a look. It’s the perfect place to unwind after work or to relax<br />
with friends. On your visit, ask for one of Trevor’s signature<br />
cocktails, such as the “Sweet Hereafter,” made with gin, fresh<br />
cucumber slices, elderflower syrup and fresh lemon juice. It’s a<br />
blast of refreshment, perfect for a Vancouver spring evening.<br />
Trevor was kind enough to share with us three innovative,<br />
spring-inspired cocktails. Try mixing them up at home!<br />
sPRiNG feVeR juLeP<br />
2 oz (60 ml) vodka<br />
2 lemon wedges<br />
2 lime wedges<br />
½ oz (15 ml) simple syrup* *<br />
4 oz (125 ml) lavender soda<br />
crushed ice<br />
in a Mason jar, muddle lemon and lime wedges. Add vodka and simple syrup.<br />
Fill glass halfway with crushed ice and stir. Add lavender soda and fill glass with<br />
crushed ice. Serve.<br />

Dissolve 1 cup (250 ml) sugar in 1 cup (250 ml) water.<br />
