“Cooking is like a trip you take every day, encouraging<br />
you to explore new and unknown territories. In<br />
the kitchen I love infinity. Every ingredient, every<br />
technique, every recipe has its own story, can be<br />
interpreted in a thousand ways and offers us different<br />
ways of seeking the ideal.<br />
I like Polish cooking and Polish produce, but I like just<br />
as much to reproduce the flavours I have encountered<br />
during my travels to near and faraway places.<br />
Seasonal and local produce, as well as ecology and<br />
tradition are all important for me, even though I will<br />
fail tradition at times. I believe in the ratio 80:20.<br />
Seasonal and local produce account for the 80%, while<br />
I leave the remaining 20% to move as I choose. This<br />
is how such dishes as beetroots and citrus fruits are<br />
born, as well as lamb flavoured with cumin, and raw<br />
sweet herring with soya sauce.<br />
In the kitchen I use ingredients that have an intense,<br />
concentrated flavour. I want them to stand out.<br />
And I always need a counterpoint. The heaviness of<br />
meat roasted in the oven needs a breath of fresh air,<br />
whereas the lightness of fresh leaves requires a sour<br />
dressing, while the delicate flavour of a creamy purée<br />
needs something crisp beside it. This is how I cook.<br />
And this is just what I like.”<br />
Grzegorz has gained experience in more than ten<br />
restaurants, learning from the best Polish chefs.<br />
He brings his skills to a number of tv programs. In<br />
recent years he’s started a company of his own, which<br />
organizes presentations and workshops. He has also<br />
established a foundation named School On A Fork,<br />
which promotes culinary education, and also belongs<br />
to Warsaw’s Slow Food Youth Association.<br />
„Kuchnia jest jak podróż zachęcająca każdego dnia<br />
do poznawania nowych, nieznanych terenów. Kocham<br />
jej nieskończoność. Każdy produkt, każda technika,<br />
każda receptura mają swoją historię, dziesiątki<br />
interpretacji i możliwości poszukiwania ideału.<br />
Lubię polską kuchnię i polskie produkty, ale lubię<br />
też odtwarzać smaki z bliższych i dalszych podróży.<br />
Przemawia do mnie idea sezonowości i lokalności,<br />
ekologicznych surowców i dbania o tradycję, jednak<br />
nie trzymam się jej ściśle. Stosuję proporcje 80:20<br />
‒ 80% produktów lokalnych i sezonowych i 20%<br />
pola manewru. Tak powstają buraki z cytrusami,<br />
jagnięcina z kminem rzymskim czy surowy słodki<br />
śledź z sosem sojowym.<br />
W kuchni używam produktów o skoncentrowanym<br />
i intensywnym smaku. Lubię wyrazistość. Potrzebuję<br />
kontrapunktu. Ciężkie pieczone mięso wymaga<br />
oddechu, lekkości świeżych liści i kwaśnego dressingu,<br />
a delikatne kremowe purée czegoś chrupkiego.<br />
Tak gotuję. To lubię”.<br />
Grzegorz zdobywał doświadczenie w kilkunastu<br />
restauracjach, u najlepszych polskich szefów kuchni.<br />
Współpracuje ze stacjami telewizyjnymi. Od kilku<br />
lat prowadzi własną firmę kulinarną, a w jej ramach<br />
organizuje między innymi warsztaty i pokazy.<br />
Założył fundację Szkoła na Widelcu, która działa<br />
na rzecz promocji edukacji kulinarnej, jak również<br />
stowarzyszenie Slow Food Youth Warszawa.<br />
