— 2 pigeon breasts<br />
— 60 g green lentils<br />
— 30 ml mead<br />
— 2 smoked prunes (suska sechlońska)<br />
— 10 g shallot<br />
— 50 g butter<br />
— 200 ml chicken stock<br />
— lovage and thyme to taste<br />
— olive oil<br />
— 2 piersi gołębia<br />
— 60 g zielonej soczewicy<br />
— 30 ml trójniaka<br />
— 2 wędzone suski sechlońskie (śliwki suszone)<br />
— 10 g szalotki<br />
— 50 g masła<br />
— 200 ml bulionu drobiowego<br />
— lubczyk i tymianek do smaku<br />
— oliwa z wytłoczyn<br />
Boil the lentils till done, then chill them 15 minutes<br />
in ice, to keep them firm. Sauté the shallot. Fry the<br />
lentils in butter with a part of the sautéed shallot.<br />
Add lovage and thyme. The mead should be poured<br />
over the lentils a minute or so later, so that it doesn’t<br />
evaporate completely, but blends with the butter.<br />
Now fry the prunes as well, with the rest of the<br />
chopped shallot, then pour some chicken stock over<br />
it. When half the stock has evaporated, sieve and<br />
continue reducing, until it thickens and gains the<br />
consistency of a sauce. Brown the pigeon breasts in<br />
a pan with the thyme, add butter to intensify the<br />
flavour of the meat, then draw away from the fire and<br />
allow to rest. Season to taste with salt and pepper.<br />
Put the lentils in individual serving dishes, place the<br />
pigeon breast cut in three pieces on top, and douse<br />
with the smoked prune sauce.<br />
Podgotowaną i zahartowaną w lodzie (trzymamy ją<br />
w naczyniu z lodem ok. 15 minut) soczewicę smażymy<br />
na maśle z częścią zeszklonej wcześniej szalotki.<br />
Dodajemy lubczyk i tymianek. Trójniak wlewamy<br />
nieco później, aby cały nie wyparował i połączył się<br />
z masłem. Śliwki również podsmażamy na maśle<br />
z posiekaną szalotką, a następnie zalewamy bulionem.<br />
Kiedy połowa bulionu odparuje, przecedzamy go<br />
przez gazę i redukujemy dalej, aż uzyska konsystencję<br />
sosu. Piersi gołębia smażymy na oliwie z wytłoczyn<br />
z dodatkiem tymianku, podbijamy smak mięsa<br />
masłem i odkładamy je, aby odpoczęło (w tym<br />
czasie solimy i posypujemy pieprzem). Wykładamy<br />
soczewicę i piesi gołębia pokrojone na 3 kawałki<br />
na talerz. Wykańczamy aromatycznym sosem<br />
z wędzonej suski.<br />
