AND OVEN-DRIED CHERRY<br />

— 950 g of boned loin of Podhale lamb<br />
— 400 g white asparagus<br />
— 200 g green asparagus<br />
— 150 g cherry tomatoes<br />
— 4 garlic cloves<br />
— salt and pepper to taste<br />
— vegetable broth (carrot, celery root, leek)<br />
— 2 sprigs thyme<br />
— 80 ml seed oil<br />
— 150 ml olive oil<br />
— the juice of 1 lemon<br />
— comber z jagnięciny podhalańskiej (950 g)<br />
— 400 g białych szparagów<br />
— 200 g zielonych szparagów<br />
— 150 g pomidorków koktajlowych<br />
— 4 ząbki czosnku<br />
— sól i pieprz do smaku<br />
— pęczek włoszczyzny<br />
— 2 łodyżki tymianku<br />
— 80 ml oleju<br />
— 150 ml oliwy z oliwek<br />
— sok z jednej cytryny<br />
Cut the meat off the bone, sprinkle it with salt and<br />
pepper and marinate in the seed oil. Prepare a glace<br />
with the bone and the vegetables. Simmer until the<br />
liquid is reduced by ¾. Cut the cherry tomates in half.<br />
On each half place a paper-thin slice of garlic. Sprinkle<br />
with a little olive oil and a pinch of salt, and dry in the<br />
oven at 90°C. Sauté the meat in the oil turning it on<br />
all sides, then roast in the oven at 160°C for<br />
8 minutes. Let it rest for a quarter of an hour.<br />
Thinly slice the asparagus. Marinate the green ones<br />
in oil and lemon juice, and blanch the white ones.<br />
Cut the meat in three sections, and wrap one of<br />
them inside the white asparagus. Place the meat in<br />
individual dishes and garnish with thyme leaves.<br />
Add the glace, the oven-dried cherry tomatoes and<br />
the crunchy green asparagus.<br />
Oddzielamy mięso od kości, posypujemy solą i pieprzem<br />
i marynujemy w oleju. Z kości i włoszczyzny<br />
przygotowujemy glace (gotujemy wywar i redukujemy,<br />
aż odparuje ¾ płynu). Pomidorki kroimy na pół.<br />
Na każdą połówkę kładziemy cienki plasterek czosnku,<br />
skrapiamy je oliwą, posypujemy solą i suszymy<br />
w piekarniku w temperaturze 90˚C. Mięso smażymy<br />
na oleju ze wszystkich stron i pieczemy 8 minut<br />
w 160˚C. Odstawiamy na 15 minut.<br />
Szparagi kroimy w cienkie paseczki. Zielone marynujemy<br />
w oliwie i soku z cytryny, a białe blanszujemy.<br />
Mięso kroimy na trzy kawałki, z których jeden<br />
zawijamy w paski białych szparagów. Kładziemy je<br />
na talerzach i dekorujemy listkami tymianku.<br />
Dodajemy sos, lekko podsuszone pomidorki oraz<br />
chrupiące zielone szparagi.<br />
