“I inherited my passion for the culinary art from my<br />
family. I grew up in a home where the kitchen was<br />
the most important room of all. At times I have the<br />
impression that the kitchen stove is on day and night<br />
there. My mother is forever discovering new flavours<br />
and experimenting with new ingredients. It was<br />
thanks to her, and also to my aunt and grandmother<br />
– whose pierogi are unrivalled – that I developed this<br />
consuming passion for cooking.<br />
For many years I was a vegetarian (but today my<br />
diet also includes fish), and it was in harmony with<br />
the precepts of that cuisine that I prepared dishes<br />
for the breakfasts I organized in a number of cafes<br />
and restaurants of Warsaw. I love the moment when<br />
people sit down at the table, pass food from one to<br />
another, and discuss what they like.<br />
I am a photographer by profession, but when a few<br />
years ago my friends asked me to run a kitchen in<br />
a bistrot they were just starting up, I immediately<br />
agreed. I realized that it was going to be hard work,<br />
yet nothing could have pleased me more. I recently<br />
went through a 3 ½ month training course at<br />
Copenhagen’s Noma restaurant, and this proved to be<br />
one of the most significant experiences I’ve ever had.<br />
In the kitchen I give prime importance to vegetables,<br />
and what grows wild. I think that a return to the<br />
woods and to long-forgotten plants allows us to turn<br />
over a new leaf in the field of cookery, and also gives<br />
us the chance to eschew artificial and unhealthy<br />
ingredients. I love using traditional recipes, handed<br />
down from generation to generation. I always keep<br />
a notebook by my side which is chock-full of notes<br />
taken by my grandmother and her friends. This is the<br />
most precious cookbook I have.”<br />
„Pasję gotowania wyniosłam z domu, w którym<br />
najważniejszym miejscem zawsze była kuchnia.<br />
Czasem mi się wydaje, że cztery palniki pracują<br />
tam na okrągło. Mama wciąż odkrywa nowe smaki,<br />
testuje nowe produkty. To właśnie ona, wraz z moją<br />
babcią i ciocią, której pierogi i konfitury nie mają<br />
sobie równych, sprawiły, że gotowanie stało się moją<br />
miłością absolutną.<br />
Przez wiele lat byłam wegetarianką (dziś w mojej<br />
diecie są obecne ryby) i w ten sposób karmiłam<br />
również ludzi na organizowanych przeze mnie<br />
śniadaniach w kilku warszawskich kawiarniach<br />
i restauracjach. Uwielbiam moment, gdy wszyscy<br />
siedzą razem przy stole, podają sobie jedzenie<br />
i rozmawiają o tym, co im smakuje.<br />
Z zawodu jestem fotografem, ale gdy kilka lat<br />
temu znajomi zaproponowali mi poprowadzenie<br />
kuchni w nowo otwieranym bistro, natychmiast<br />
się zgodziłam. Zdawałam sobie sprawę, że jest to<br />
ciężka, fizyczna praca, a jednak wiedziałam, że nic<br />
nie będzie sprawiało mi większej przyjemności.<br />
Niedawno wróciłam z trzyipółmiesięcznego<br />
stażu w kopenhaskiej Nomie i to było jedno<br />
z najciekawszych doświadczeń w moim życiu.<br />
W kuchni stawiam na warzywa i dziko rosnące zioła.<br />
Uważam, że powrót do lasu i dawno zapomnianych<br />
roślin jest przełomem w gotowaniu i szansą<br />
na pozbycie się z kuchni sztucznych i niezdrowych<br />
składników. Lubię korzystać z tradycyjnych receptur<br />
przekazywanych z pokolenia na pokolenie. Jestem<br />
w posiadaniu zeszytu pełnego notatek mojej babci i jej<br />
przyjaciółek ‒ jest to dla mnie najcenniejsza książka<br />
kucharska”.<br />
