Uszka dumplings stuffed<br />
with raspberry jam<br />
in a beer sauce<br />

For the sauce:<br />
— 500 ml light beer or honey lager<br />
— 200 g brown sugar<br />
Sos:<br />
— 500 ml piwa miodowego bądź jasnego<br />
— 200 g brązowego cukru<br />
For the jam:<br />
— 500 g raspberries<br />
— 120 g xylitol, or 150 g sugar<br />
— ½ teaspoon pectin<br />
Konfitura:<br />
— 500 g malin<br />
— 120 g ksylitolu bądź 150 g cukru<br />
— ½ łyżeczki pektyny<br />
For the dough:<br />
— 75 g wheat flour<br />
— 35 ml hot water<br />
— 1 pinch of salt<br />
Ciasto:<br />
— 75 g mąki pszennej<br />
— 35 ml gorącej wody<br />
— szczypta soli<br />
Put the sugar in a pan, pour the beer over it and<br />
simmer on a low fire, reducing by ⅔.<br />
Prepare the jam: mix the raspberries, the xylitol and<br />
the pectin in a pan, bring to a boil and simmer for<br />
5 minutes. Put the jam in sterilized pots.<br />
Make a dough with the flour, water and salt. Cover<br />
with a cloth and allow to rest for 15–20 minutes.<br />
Roll out with a rolling pin until you have a thin sheet<br />
of dough. Cut out rounds 7 cm in diameter. On each<br />
round place a teaspoon raspberry jam. Moisten the<br />
edges of the rounds with a drop of water, glue the<br />
edges together and join the two ends. Boil them in<br />
salted water until they rise to the surface. Serve them<br />
with the beer sauce and a little raspberry jam.<br />
Cukier wsypujemy do garnka, zalewamy piwem<br />
i gotujemy na małym ogniu, aż pozostanie ⅓ płynu.<br />
Przygotowujemy konfiturę: maliny, ksylitol i pektynę<br />
mieszamy w garnku, doprowadzamy do wrzenia<br />
i gotujemy 5 minut. Przekładamy do wyparzonych<br />
słoiczków.<br />
Zagniatamy mąkę z wodą i solą. Odstawiamy ciasto<br />
na 15−20 minut pod wilgotną ściereczką,<br />
aby odpoczęło, a po tym czasie cienko wałkujemy.<br />
Wykrawamy krążki o średnicy 7 cm. Na środek każdego<br />
krążka nakładamy łyżeczkę konfitury malinowej.<br />
Brzegi zwilżamy wodą i sklejamy na kształt pierogów.<br />
Następnie dwa przeciwległe rogi pierożka sklejamy<br />
ze sobą, aby powstało uszko. Gotujemy uszka<br />
w osolonej wodzie, aż wypłyną. Podajemy z sosem<br />
piwnym i odrobiną konfitury.<br />
