European Union food certifications are a clear recognition<br />
of the quality of traditional Polish meats. In the region of<br />
Małopolska the PGI (Protected Geographical Indications)<br />
mark was awarded both to the lisiecka sausage, which is<br />
made with pork ham, garlic, salt and white pepper and<br />
smoked with firewood of broadleaf trees, and to Podhale<br />
lamb. The special quality of this second meat is thanks<br />
to the pastures of the Podhale region, which are rich in<br />
different grasses. Owca górska and cakiel podhalański are<br />
species of sheep native to Poland.<br />
Kabanos sausages can be produced throughout the<br />
European Union, but only Poland has the right to mark<br />
its kabanos with TSG (Traditional Speciality Guaranteed)<br />
certification. TSG certification has also been awarded to<br />
the jałowcowa sausage, which is cold-smoked, has the<br />
aromas of the Polish forest, and gets its name from the<br />
juniper berries which go into its making; to the myśliwska<br />
sausage which is tender and keeps for a long time, so<br />
much so that hunters used to put it in their food bag<br />
when they went into the forest. The Podlasie region has<br />
for generations been producing another delicacy, the<br />
kumpiak podlaski. This ham is flavourful to the special<br />
way of making it, which includes the use of spices and<br />
a slow maturing process.<br />
For some years now goose meat has been making<br />
a comeback on Polish tables, and this is thanks to the<br />
positive results of the “Gęsina św. Marcina”, or<br />
St. Martin’s goose initiative. The best quality comes from<br />
the Kołuda Wielka oat-fed goose. A few weeks before<br />
being butchered, these geese are fed only with whole oat<br />
grains. The fat produced from this bird is also healthy<br />
and tastes great, besides being chock-full of Omega-3 and<br />
Omega-6. Never mind roasted goose, półgęsek i.e., coldsmoked<br />
goose breast, is also coming back fast.<br />
In addition, Polish gourmets have begun to appreciate<br />
seasonal beef from foreign strains or crossed with the<br />
Polish red cow, but both bred in Poland. Chefs maintain<br />
that this soil has all the required conditions to produce<br />
high-quality, flavourful beef.<br />
Dowodem uznania dla tradycji polskiego masarstwa są<br />
unijne certyfikaty. W Małopolsce certyfikat Chronione<br />
Oznaczenie Geograficzne przyznano kiełbasie lisieckiej,<br />
robionej z szynki z dodatkiem czosnku, soli, białego<br />
pieprzu i wędzonej drewnem drzew liściastych,<br />
a także jagnięcinie podhalańskiej. O szczególnych<br />
walorach tego mięsa decyduje wypas na tatrzańskich<br />
halach pełnych ziół. Rasy polska owca górska i cakiel<br />
podhalański są endemiczne.<br />
Kabanosy można wyrabiać w całej Wspólnocie,<br />
lecz tylko Polska ma prawo sygnować tę cienką<br />
kiełbasę znakiem Gwarantowana Tradycyjna<br />
Specjalność. To oznaczenie zdobyła też wędzona<br />
na zimno i pachnąca polskim lasem kiełbasa<br />
jałowcowa, która nazwę zawdzięcza owocom jałowca<br />
w farszu, jak również trwała i krucha kiełbasa<br />
myśliwska, służąca niegdyś za prowiant podczas<br />
polowań. Na Podlasiu od pokoleń powstaje inny<br />
doceniany przysmak − kumpiak podlaski. Smak szynka<br />
zawdzięcza odpowiedniemu przyprawieniu, suszeniu<br />
i długiemu dojrzewaniu.<br />
Od kilku lat na polskie stoły powoli wraca gęsina,<br />
co jest efektem akcji „Gęsina na św. Marcina”.<br />
Najlepsze mięso mają gęsi owsiane z Kołudy Wielkiej.<br />
Kilka tygodni przed ubojem ptaki dostają wyłącznie<br />
ziarno owsa – stąd ich nazwa. Gęś kołudzka ma także<br />
zdrowy i pyszny tłuszcz, bogaty w kwasy omega-3<br />
i omega-6. Poza pieczoną gęsią do łask wraca też<br />
półgęsek, czyli wędzone na zimno gęsie piersi.<br />
Polscy smakosze zaczęli również doceniać rodzimą<br />
sezonowaną wołowinę ras obcych lub mieszanek<br />
z rasą polską czerwoną. Zdaniem szefów kuchni<br />
w Polsce są warunki do produkcji mięsa wołowego<br />
o wybitnych walorach smakowych.<br />
