Kaum eine andere Region in der Schweiz beherbergt so<br />
viele Naturschätze wie das Entlebuch. 2001 wurden<br />
die tiefen Täler, dunklen Wälder und grünen Weiden<br />
von der UNESCO als erstes Biosphärenreservat der<br />
Schweiz anerkannt. Gut 100 Bauern betreiben im ländlichen<br />
Entlebuch Bergheu-Milchwirtschaft. Bei dieser<br />
ursprünglichsten Form der Milchgewinnung geniessen<br />
die Kühe das ganze Jahr über frische Bergluft. Sie grasen<br />
auf saftigen Bergwiesen und werden mit sonnengetrocknetem<br />
Heu gefüttert. Auf vergorene Futtermittel<br />
wie Silage verzichten die Entlebucher Bauern bewusst.<br />
Die naturnahe Fütterung der Kühe und die schonende<br />
Weiterverarbeitung der Bergheumilch spiegeln sich in<br />
der hohen Qualität und im sämigen Geschmack der<br />

Scarcely another region in Switzerland is home to so<br />
many natural treasures as the Entlebuch. In 2001 the<br />
deep valleys, dark forests and green pastures were recognised<br />
by UNESCO as the first biosphere reserve in<br />
Switzerland. Some 100 farmers work in the mountain<br />
pasture dairy farming business in rural Entlebuch. This<br />
highly traditional form of milk production lets the cows<br />
enjoy fresh mountain air the whole year long. They<br />
graze on succulent mountain pastures and are fed with<br />
sun-dried hay. The farmers very consciously avoid fermented<br />
feed such as silage. The natural method of feeding<br />
of the cows and the gentle processing of the hay milk<br />
are reflected in its high quality and creamy taste. This<br />
pure, nutritious hay milk is now, for the first time, being<br />
refined into fine chocolate by Confiserie Sprüngli.<br />
