The Dietary Management Program is<br />

designed <strong>for</strong> individuals who wish to<br />

obtain the Certified Dietary Manager<br />

(CDM) credential. The program follows<br />

the curriculum prescribed by the Dietary<br />

Managers Association. Field Experience I<br />

consists of 50 hours of supervised, handson<br />

experience in commercial food service<br />

operations. Field Experience II consists<br />

of 50 hours of supervised, hands-on<br />

experience in food service department<br />

management. Field Experience III consists<br />

of 50 hours of supervised, hands-on<br />

experience in patient care.<br />

** Field Experience I and II may be waived <strong>for</strong> students having two years experience in a<br />

managerial or supervisory capacity in institutional food service production. The waiver<br />

must be approved by the dietary management program administrator.<br />

A student must maintain a grade of “C” or better in each of the required courses in the<br />

Dietary Management program to take the Certified Dietary Management Exam.<br />

Students are subject to criminal background checks and TB screening/clearance.
