Italian cuisine is the result of many different regional culinary<br />

traditions that, although merged and diluted over centuries, still<br />

maintain their particular flavors and distinct ingredients. Thanks<br />

in recent years to a greater availability of wines from different<br />

regions, the pairing of food and wine, always a traditional<br />

aspect of Italian cuisine, has become more important in the<br />

organization of a menu and the presentation of a meal. In this<br />

course the various ways of pairing Italian food and wine will be<br />

analyzed and used for menu planning. This involves research<br />

into aspects of both wine and food, with special emphasis on<br />

classification and technical terminology, nutritional and health<br />

issues, chemical composition, sensory and other evaluation<br />

techniques, as well as cooking skills that will be practiced<br />

regularly in class.<br />

Italian dishes from the various traditional regions. Emphasis is on<br />

vegetables, cereals and legumes. Classes are supported by<br />

visits to local cheese, wine, and oil producers.<br />

Stu<strong>de</strong>nts with existing knowledge of piano technique will gain<br />

a comprehensive un<strong>de</strong>rstanding of theoretical and practical<br />

aspects of the language of jazz piano improvisation. The<br />

course will inclu<strong>de</strong> a traditional Afro-American repertoire as<br />

well as study of the characteristics of jazz writing through the<br />

lens of harmonic-functional material. Stu<strong>de</strong>nts will learn the<br />

foundations of composition and rearranging scores. The course<br />

may also give stu<strong>de</strong>nts the opportunity to practice their own<br />

work with a rhythm section (double-bass and drums).<br />

The Rhythm of the Tao is a mental and physical discipline that<br />

enables us to trigger the creative process and experience the<br />

sense of harmony within ourselves through music. Classes,<br />

will introduce stu<strong>de</strong>nts to Taoist philosophy and the Eastern<br />

concept of harmony as expressed through music. The physical<br />

dimension focuses on meditation and movement through<br />

music and rhythm.<br />

The course is based on the script, the language of images,<br />

and the figurative and narrative components of the story. I<strong>de</strong>a,<br />

story line, treatment and screenplay will be covered, as well<br />

as literary and original screenplays. The different roles of the<br />

production team will be analyzed: preparation: casting and<br />

work plan; technical means of directing (techniques of cinema<br />

/ vi<strong>de</strong>o shooting styles); lighting techniques and photography;<br />

editing (mainly with Avid XP software): construction and<br />

<strong>de</strong>finition of the film story line; editing methods with magnetic<br />

tape; and post-production (mixing and dubbing). The course<br />

aims to connect the different stages of production to provi<strong>de</strong><br />

the stu<strong>de</strong>nt with a global view of the expressive power of the<br />

media from the creative to the realizable.<br />

be introduced to the fundamental principles and elements of<br />

drawing using charcoal, pencil and various other media. The<br />

aim of the course is to <strong>de</strong>velop a better un<strong>de</strong>rstanding and<br />

knowledge of drawing, and to encourage further studies.<br />

Tuscania Sketchbook - Beginning<br />

In this course stu<strong>de</strong>nts <strong>de</strong>velop basic observation, drawing and<br />

watercolor skills in a refreshing way. Stu<strong>de</strong>nts keep a series of<br />

sketchbooks and <strong>de</strong>velop finished drawing projects from them.<br />

After initial training in fundamental drawing techniques for<br />

pencil, pen and other media, the course is <strong>de</strong>dicated principally<br />

to sketching outdoors in the city and environs. Stu<strong>de</strong>nts<br />

<strong>de</strong>velop ability in representing a variety of subjects, including<br />

the human form, architecture, and landscape. Exploiting<br />

the advantages of the site, stu<strong>de</strong>nts explore such themes as<br />

historical monuments, street life, and formal gar<strong>de</strong>ns. They<br />

encounter art of the past, including efforts to sketch the same or<br />

similar topics. The course equips stu<strong>de</strong>nts to efficiently capture<br />

impressions by drawing in various media at various rates and<br />

scales, keeping annotations, i<strong>de</strong>as, sketches, and analyses<br />

of artwork in a journal, and <strong>de</strong>veloping personal interests.<br />

Stu<strong>de</strong>nts observe medieval churches, city walls, visit excavation<br />

sites, and explore the unspoiled and majestic countrysi<strong>de</strong> of<br />

Tuscania and neighboring towns.<br />
