Background: Potable water is one of the most basic human needs, and properly treated and clean water<br />

is necessary to avoid disease. Improperly handled water<br />

What to check for: Check that potable water tanks are dedicated for potable water and tanks and pipes<br />

are clearly marked. Check for potential sources of contamination of these tanks such as sanitary drains<br />

through the tanks (unless a pipe within a pipe). Check that water is disinfected in some way. Check that<br />

ice used in drinks or food preparation is only from potable water.<br />

Only potable water shall be provided for drinking and culinary purposes by any operator of a conveyance engaged<br />

in interstate traffic, except as provided in § <strong>12</strong>50.84(b) of this chapter. Such water shall either have been obtained<br />

from watering points approved by the Commissioner of Food and Drugs, or, if treated aboard a conveyance, shall<br />

have been subjected to treatment approved by the Commissioner of Food and Drugs.<br />

21 CFR <strong>12</strong>50.80 Applicability.<br />

The sanitation facilities and the sanitary conditions on vessels engaged in interstate traffic shall comply with the<br />

requirements prescribed in this subpart, provided that no major structural change will be required on existing<br />

vessels.<br />

Sec. <strong>12</strong>50.81 Inspection.<br />

The Commissioner of Food and Drugs may inspect such vessels to determine compliance with the requirements<br />

Sec. <strong>12</strong>50.82 Potable water systems.<br />

The following conditions must be met by vessel water systems used for the storage and distribution of water<br />

which has met the requirements of Sec. <strong>12</strong>40.80 of this chapter.<br />

(a) The potable water system, including filling hose and lines, pumps, tanks, and distributing pipes, shall be<br />

separate and distinct from other water systems and shall be used for no other purposes.<br />
