Kletsky - Apple Dumplings<br />

2 apples,peeled, cored, &<br />

-finely ch,opped<br />

1/4 c sugar<br />

1 lemon,juice & grated rind<br />

1 egg,beaten<br />

3/4 c dry bread crumbs<br />

1/2 t cinnamon fine,Ground<br />

Pour <strong>the</strong> lemon juice over <strong>the</strong> apples and kix in well. Squeeze thje<br />

apples gently to dry. Mix <strong>the</strong> apples with <strong>the</strong> lemon rind, cinnamon,<br />

sugar, egg, & bread crumbs. Chill in refrigerator for 20-30 minutes<br />

Make balls of this mixture 1" in size Drop <strong>the</strong>m in a boiling pot of<br />

slightly salted water. Cook until <strong>the</strong>y rise to <strong>the</strong> surface <strong>the</strong>n<br />

remove with a slotted spoon. Cool to room temperature. These may be<br />

added to a cold fruit soup or eaten with many o<strong>the</strong>r foods.<br />
