e terra rappresentarono la sicurezza,<br />
la stabilità, la promessa di un domani.<br />
Anche se fu, per secoli e secoli, un<br />
domani specialmente di sudore e di<br />
sangue. Oggi, gironzolando da turisti<br />
viziati su queste terre ancora aspre, è<br />
difficile immaginare che le splendide<br />
masserie attrezzate ad agriturismo- i<br />
cultori della cucina potranno trovare<br />
delizie che non hanno eguali- furono<br />
veri e propri fortilizi contro le ripetute<br />
scorrerie dei pirati levantini, poi dei<br />
saraceni, poi ancora dei vari regni<br />
corsari del Nord Africa. Erano come il<br />
Forte Apache della sagra del far West<br />
americano: isole fortificate nella campagna,<br />
fatte per raccogliere la gente<br />
del contado ad ogni allarme, sbarrarsi<br />
dentro le mura di tufo e di sassi proteggendosi<br />
alla meglio dagli assalti<br />
con lanci di pietre, di lance primitive,<br />
anche di olio o acqua bollente dalle<br />
caditole che ancora esistono sopra<br />
i portoni. Quell’olio che oggi è oro<br />
liquido (portatevene un po’ a casa al<br />
ritorno, come una reliquia) e che allora<br />
poteva salvare la pelle abriciando<br />
qualche assalitore. Qualche volta nelle<br />
masserie sopravvivevano alle scorrerie<br />
perché altri arrivavano in aiuto: qualche<br />
volta facevano la fine del sacco di<br />
Otranto, dove persino le monache e i<br />
fanciulli erano stati trapiantati di peso<br />
negli harem ottomani e non era rimasto<br />
muro su muro.<br />
Di quelle sagre, di quei saccheggi, di<br />
quei massacri, rimangono i ricordi<br />
nelle tradizioni della campagna salentina,<br />
sia pure stemperati dai secoli e<br />
dalla dolcezza della gente che ha antiche<br />
serenità: e dal cielo, dal lontano<br />
orizzonte marino d’indaco, dal fatalismo<br />
di vecchi e giovani, eppure ancora<br />
capaci di sognare sia il passato che il<br />
futuro. E di aiutarci, se apriamo loro il<br />
cuore, a sognare anche noi.<br />

and chimeras – stone and land represented<br />
security, stability, the promise of<br />
tomorrow. Even though, for centuries,<br />
it was a tomorrow largely of blood and<br />
sweat. Today, spoilt tourists sightseeing in<br />
these still fairly barren parts find it hard<br />
to imagine that the beautiful farmhouse<br />
holiday places – now offering incomparable<br />
culinary delights – were once actually<br />
forts used to repel the repeated raids<br />
of Saracens, Levantine pirates and North<br />
African corsairs. They were like Fort<br />
Apache in the Wild West: citadels in the<br />
countryside where local people would<br />
seek protection every time there was<br />
an alarm – behind these tufa and rock<br />
walls they could take refuge and, if necessary,<br />
respond to attacks by throwing<br />
stones, primitive spears and even boiling<br />
water or oil from the embrasures that<br />
can still be seen at the top of the doors.<br />
The same oil that is now liquid gold<br />
(take some home with you and treat it<br />
like a holy relic) was once a means of<br />
defence that could mean the difference<br />
between life and death. Sometimes these<br />
makeshift fortresses withstood the raids<br />
because other local people came to the<br />
rescue. On other occasions their fate was<br />
similar to the sack of Otranto, where not<br />
one brick was left standing and even the<br />
nuns and the children ended up in the<br />
Ottoman harem.<br />
The echoes of the battles, looting and<br />
massacres are part and parcel of the<br />
Salento heritage, albeit dulled to some<br />
extent by the passing of time, by the ageold<br />
equanimity of the people in this part<br />
of Italy, and by the soothing effects of faroff<br />
indigo on the horizon. Here, young<br />
and old alike are fatalistic and yet, at the<br />
same time, they know how to cherish the<br />
past and dream about the future. If you<br />
open your heart to them, then they can<br />
teach you how it’s done.<br />
