establishments were reported within Erie County.<br />
SIZE OF FOOD PROCESSING ESTABLISHMENTS<br />
Food processing businesses are increasingly becoming larger in size<br />
through the occup<strong>at</strong>ion of larger building footprints. In Erie County, food<br />
processors occupy spaces less than 2,499 square feet to spaces more than<br />
^\E\\\($?%0+'(.''/6(83&"$/("#'()./4(:ZY=>(".(N+,'(7"%#/5b$(.""1(B+"!'$$,#-(<br />
establishments have a physical footprint in excess of 40,000 square feet.<br />
Many of these establishments include largescale oper<strong>at</strong>ions such as me<strong>at</strong><br />
packing businesses, bakeries, bottle and canning manufacturers, and frozen<br />
food processors. By comparison, the two smallest space c<strong>at</strong>egories (02,499<br />
square feet and 2,5009,999 square feet), combined amount to one third<br />
(33%) of the area’s food processing square footage. Close to half of the<br />
area’s food processing establishments (47%) are within the 10,00039,999<br />
square footage range (See Figure 3.4).<br />
CREDIT WORTHINESS<br />
The credit r<strong>at</strong>ing of a food businesses can have a tangible effect on its<br />
ability to seek and borrow capital for various needs associ<strong>at</strong>ed with business<br />
oper<strong>at</strong>ions. For example, businesses with higher credit r<strong>at</strong>ings are more<br />

of A+, A, or A are considered excellent, with B+ and B are considered very<br />
good, and r<strong>at</strong>ings of C+ and C are fair. Within Erie County, 85 percent of the<br />
food processing establishments have an excellent or very good credit r<strong>at</strong>ing,<br />
suggesting th<strong>at</strong> these processors’ access to new credit is not ideal. Only 9<br />
percent of the county’s food processors have a fair credit r<strong>at</strong>ing (See Figure<br />
3.5).<br />
