SCENARIO 1: INCREASED DEMAND FOR HEALTHIER FOOD<br />

As noted in the opening chapters of this report, Erie County residents<br />

consume less than recommended amounts of fruits and vegetables. In<br />

impact of 20 percent increase in consumer demand for fruits and vegetables.<br />

We assume under this scenario th<strong>at</strong> consumers would consume fruits and<br />

vegetables locally <strong>at</strong> the same r<strong>at</strong>e as they have done in the past.<br />

Results show th<strong>at</strong> a mere 20 percent increase in demand for fruits (a<br />

mere $3.20 per household annually) and vegetables (also low <strong>at</strong> $6.50 per<br />

household annually) would gener<strong>at</strong>e $984,023 in additional annual sales<br />

and support an additional 9 jobs in Erie County. In other words, increased<br />

demand for fruits and vegetables is not only good for resident’s health, but<br />

also Erie County’s economy.<br />

SCENARIO 2: INCREASED DEMAND FOR HEALTHY AND LOCAL FOOD<br />

The prior scenario assumes th<strong>at</strong> Erie County consumers would<br />

purchase fruits and vegetables grown locally and elsewhere. In this second<br />

scenario, we estim<strong>at</strong>e the economic impact of e<strong>at</strong>ing both fruits and<br />

the economic impact if there were a 20 percent increase in total demand for<br />

fruits and vegetables, and if consumers were to double the proportion of<br />

local purchase for current fruits and vegetables (31% and 15%, respectively).<br />

more local fruits and vegetables would gener<strong>at</strong>e $1,962,613 in additional<br />

sales and support an additional 19 jobs. This estim<strong>at</strong>ion suggests th<strong>at</strong> by<br />

doubling the consumption of locally grown fruits and vegetables, Erie<br />

County residents can gener<strong>at</strong>e $978,590 in economic impact and 10 more<br />

jobs in Erie County (See Table 8.4).<br />
