Convenience stores and gas st<strong>at</strong>ions have a smaller share of retail<br />

sales than the larger food retailers, despite their higher combined number of<br />

establishments. In 2007, there were 125 convenience store establishments<br />

and 284 gas st<strong>at</strong>ions within the county. Convenience stores employed 1,104<br />

individuals and gas st<strong>at</strong>ions employed 2,720 individuals. Together, both<br />

business types earned $1.2 billion in revenues.<br />

Specialty stores constitute an even smaller percentage of sales<br />

to the food retailing market. In 2007, there were only 97 establishments<br />

employing 826 individuals and bringing in approxim<strong>at</strong>ely $81 million in<br />

receipts. Compared to 2002, there was a slight decrease in the number of<br />

establishments from 105 in 2007. The number of employees in 2002 was<br />

722 and there was approxim<strong>at</strong>ely $70 million in receipts.<br />

member, one vote, 3) limited or no interest on investment shares, and 4)<br />

Co­op, the only remaining food cooper<strong>at</strong>ive loc<strong>at</strong>ed on Elmwood Avenue in<br />

<strong>Buffalo</strong>, New York, has provided local and organic foods to customers and<br />

shareholders. The business model encourages community shareholders to<br />

actively particip<strong>at</strong>e in the business by giving member shareholders discounts<br />

on food purchased <strong>at</strong> the co­op. As a shareholder, each member receives her<br />

a percentage of the amount of money spent by each shareholder during the<br />

In whole, grocery stores and supermarkets constitute the largest<br />
