Table 2.5 Sources <strong>of</strong> noise <strong>from</strong> commercial kitchen ventilati<strong>on</strong> systems<br />

Source <strong>of</strong> <strong>Noise</strong> How/Why <strong>Noise</strong> Arises<br />

Extract hood - High air velocities through extract hood<br />

Extract/supply grille - High air velocities through extract/supply grille<br />

Extract/supply ductwork - High air velocities through extract/supply ductwork<br />

Extract/supply fan - Fan motor noise<br />

- Res<strong>on</strong>ance <strong>of</strong> fan noise through extract/supply ductwork<br />

- Fan impeller turning<br />

Extract/supply discharge point - High extract/intake air velocities<br />

2.3 Typical Problems Encountered With Commercial Kitchen<br />

Ventilati<strong>on</strong> Systems<br />

Netcen, with <strong>the</strong> assistance <strong>of</strong> <strong>the</strong> CIEH, c<strong>on</strong>tacted a number <strong>of</strong> Local Authorities to<br />

review <strong>the</strong> types <strong>of</strong> problems encountered by Council Officers when dealing with<br />

odour <strong>and</strong> noise situati<strong>on</strong>s. A summary <strong>of</strong> this informati<strong>on</strong> ga<strong>the</strong>ring exercise is<br />

given in Annex A. Resp<strong>on</strong>ses were received <strong>from</strong> metropolitan <strong>and</strong> rural Authorities.<br />

Authorities <strong>from</strong> Engl<strong>and</strong>, Nor<strong>the</strong>rn Irel<strong>and</strong>, Scotl<strong>and</strong> <strong>and</strong> Wales have been<br />

c<strong>on</strong>sulted. The main areas <strong>of</strong> c<strong>on</strong>cern are summarised in Table 2.6.<br />

Area Effect<br />

Where restaurant changes<br />

cooking type (e.g. <strong>from</strong> tea<br />

room to fish <strong>and</strong> chip shop)<br />

Applicati<strong>on</strong> <strong>of</strong> grease filters <strong>and</strong><br />

pre filters<br />

Applicati<strong>on</strong> <strong>of</strong> electrostatic<br />

precipitati<strong>on</strong><br />

Generally found that change introduces more extensive<br />

odour emissi<strong>on</strong>s over l<strong>on</strong>ger opening times.<br />

Existing planning permissi<strong>on</strong> may not include an odour<br />

c<strong>on</strong>trol requirement. Need to rely <strong>on</strong> nuisance legislati<strong>on</strong> to<br />

ensure mitigati<strong>on</strong> measures are installed.<br />

Mixed experience <strong>of</strong> filter maintenance. Maintenance<br />

interval <strong>of</strong> 14 days c<strong>on</strong>sidered necessary.<br />

Not in widespread use. C<strong>on</strong>cerns about:<br />

• ESP used for odour c<strong>on</strong>trol (as opposed to particle<br />

c<strong>on</strong>trol); <strong>and</strong><br />

• Maintenance.<br />

Generally used in c<strong>on</strong>juncti<strong>on</strong> with o<strong>the</strong>r abatement<br />

procedures.<br />

Applicati<strong>on</strong> <strong>of</strong> carb<strong>on</strong> filtrati<strong>on</strong> Mixed experience with carb<strong>on</strong> filters. C<strong>on</strong>cerns about:<br />

• Poor maintenance;<br />
