Natural systems cannot provide targeted ‘cooling’ to staff working adjacent to<br />
canopies. Make-up air can be introduced into a kitchen by means <strong>of</strong>:<br />
• <strong>the</strong> canopy;<br />
• ventilated ceiling;<br />
• HVAC system; or<br />
• combinati<strong>on</strong> <strong>of</strong> <strong>the</strong> above.<br />
A range <strong>of</strong> extracti<strong>on</strong>/make up air hoods are available. The choice <strong>of</strong> hood will be<br />
dictated by <strong>the</strong> applicati<strong>on</strong>. Whichever system is chosen due regard should be given<br />
to potential noise issues arising <strong>from</strong> <strong>the</strong> make up air system (fans, duct work, grilles,<br />
noise breakout etc).<br />
Where a kitchen relies <strong>on</strong> a natural make-up air system, its resistance must be taken<br />
into account when calculating <strong>the</strong> overall system resistance against which <strong>the</strong><br />
extracti<strong>on</strong> fan will operate. In such a system, restaurant operators may rely <strong>on</strong> open<br />
doors <strong>and</strong> windows within <strong>the</strong> kitchen area to supply natural make up air. During<br />
summer m<strong>on</strong>ths this may give rise to odour <strong>and</strong> noise problems for receptors living<br />
adjacent to <strong>the</strong> kitchen area or, allow <strong>the</strong> ingress <strong>of</strong> pests into <strong>the</strong> food areas.<br />
