Drain<br />
The dimensi<strong>on</strong>s <strong>of</strong> a canopy are dictated by <strong>the</strong> size <strong>of</strong> <strong>the</strong> catering equipment that it<br />
is serving. The two criteria that have <strong>the</strong> most influence <strong>on</strong> <strong>the</strong> amount <strong>of</strong> air required<br />
for effective ventilati<strong>on</strong> are <strong>the</strong> plan dimensi<strong>on</strong>s <strong>and</strong> height.<br />
Unless restricted by walls etc., <strong>the</strong> plan dimensi<strong>on</strong>s <strong>of</strong> <strong>the</strong> canopy should always<br />
exceed <strong>the</strong> plan dimensi<strong>on</strong>s <strong>of</strong> <strong>the</strong> catering equipment by a minimum <strong>of</strong> 200mm <strong>on</strong><br />
each free side <strong>and</strong> by 300mm at <strong>the</strong> fr<strong>on</strong>t <strong>and</strong> rear. Dimensi<strong>on</strong>s at <strong>the</strong> side may need<br />
