The following recipe comes
from the Readers Digest
Association and is for a very
popular dessert, rice pudding.
Rice puddings vary greatly hi
flavor, preparation and
finished texture. This is a
rather different approach that
yields extremely good results.
Toe rice is washed, dried and
cooled a few moments in butter
before it is added to the milk.
RICE PUDDING
Serves 4 to 6
One-third cup rice
2 tblsp. butter
4 c. milk
3 tblsp. sugar
Dash salt
Nutmeg -
Wash the rice in several
changes of cold water. Drain
and dry the grains between
sheets of paper towels. In a
heavy 1V4 quart casserole, melt
the butter over low heat. Add
the rice and heat it, stirring
constantly until the grains
whiten. Do not let them brown.
I
In a saucepan combine the
milk with the sugar and salt
and heat it to Just below the
boiling point. Add it to the rice,
stirring Just long enough to
Wend. Let the milk bubble over
the heat for a few seconds.
Remove the casserole from the
heat and sprinkle the top of the
rice and milk with nutmeg.
Cover the casserole with a
tight-fitting lid or foil and set it
in an oven preheated to 250
degrees: Bake for \Vi hours or
until it is firm and the grains of
rice are very soft. Serve warm
or cold
