This study examines the impact of the Atkins diet on the number of employees in Michigan’s
flour, bakery, and pasta industries. These industries have been in decline prior to the introduction
of the Atkins diet, but changing consumer attitudes formulated by the diet appear to have
accelerated the employment decline.
