were found to increase in size from 58% to 84% RH further suggesting the swelling behaviour<br />
due to increased water content. At 11% RH, the cross section was seen to be much rougher in<br />
comparison. In the absence <strong>of</strong> water, less interference between protein chains could result in<br />
increased interactions between proteins. These results may suggest that although surface<br />
disruptions are minimized, inherent defects <strong>of</strong> bubbles were present at the microscopic level.<br />
Furthermore, the swelling behaviour showed that SPI films were very sensitive to water content<br />
with changing relative humidity.<br />
