4.4.4 BARRIER PROPERTIES Water vapour permeability (WVP) data is shown in Table 4.5 and Figure 4.12. An increasing trend of WVP can be seen with the increase in RH. WVP values of films at 23% RH and below had no significant difference whereas WVP increased considerably as the RH increased from 43% to 84%. The inherent sensitivity of SPI films to water is apparent. Sorption of water can cause the protein film to swell and increase the polymer free volume, which allows for increased mobility of polymer chains leading to higher a WVP (Kokoszka et al. 2010). Higher WVP can also be explained with SEM results as defects within the film are exaggerated with increasing RH. In addition, the swelling behaviour which causes the presence of surface wrinkles would indicate a higher exposure of surface area at the microscopic level. This would be beneficial for increasing water transport across the film resulting with the higher WVP values observed. At 58% RH, the WVP was found to be 8.03 x 10 -11 ± 7.21 x 10 -12 g·m/m²·sec·Pa which is lower than the range reported for casted films from 15 x 10 −11 g·m/m²·sec·Pa (ΔRH=50%, 75 µm, Denavi et al. 2009) to 370E−11 g·m/m²·sec·Pa (ΔRH=50%, 75 µm, Cho et al. 2007). This would indicate that extruded films may have stronger barrier performance than casted films. With the application of heat and shear, increased crosslinking reactions are experienced through extrusion (Verbeek and van den Berg 2010). The increased performance could be attributed to decreased swelling due to cross-linking of protein (Pommet et al. 2005). 40
