TRAVELLIVE 07-2016

My grandfather often took me to school in the mornings when I was a little girl. We usually left earlier and stopped by a bakery near my school. He ordered cakes and milk for me while choosing a cup of black coffee with filter for him. When eating my food, I loved counting the drops of coffee falling down through the filter, wondering how they tasted. Once, when my grandfather was buying a magazine, I surreptitiously dipped a finger in the cup of coffee. Bitter! It was the first time I tasted it and couldn’t understand why the drink that many adults love was so bitter. That time I felt like I would never like coffee.

TROPICAL
BREAKFAST PARTY
WITH FRUIT
COMPOTE
Text: Pan Banana - Photos: Park Hyatt Saigon
IN MANY Western countries where fruits
are not as abundant as in tropical nations,
there are several methods of preserving fruit.
Instead of fresh fruit, they can enjoy jam,
jelly, preserves, and marmalade as well as
chutney and compote.
Of all products made from fruit, fruit
compote is most beloved by gourmets,
especially those who like starting their day
with toast and a cup of hot coffee. In the
Middle Ages, Europeans believed that fruits
cooked in syrup could balance their humors
and protect their health; therefore, they often
ate fruit compote for dessert after a party.
To make compote, fresh fruits are stewed
well with syrup, lemon peel, cinnamon, anis,
and spirits such as rum, schnapps, or fruit
brandy. Meat can be added to make
dishes savory.
Fruit compote tastes best when served hot
with cold yogurt or cream. You can add
almonds and raisins to make it tastier.
The most popular types of fruit compote
are made from pears, plums, peaches,
strawberries, and blueberries. Compote
is more aromatic than Vietnamese jam.
Unlike sweet jam, compote keeps the fruit's
sour taste.
Are you feeling a small breakfast party in the
tropics? It's easier than you thought. Prepare
some hot slices of toast, sour fruit compote,
and a cup of good coffee... uhm, that's all
what you need!
