My grandfather often took me to school in the mornings when I was a little girl. We usually left earlier and stopped by a bakery near my school. He ordered cakes and milk for me while choosing a cup of black coffee with filter for him. When eating my food, I loved counting the drops of coffee falling down through the filter, wondering how they tasted. Once, when my grandfather was buying a magazine, I surreptitiously dipped a finger in the cup of coffee. Bitter! It was the first time I tasted it and couldn’t understand why the drink that many adults love was so bitter. That time I felt like I would never like coffee.

IN MANY Western countries where fruits<br />
are not as abundant as in tropical nations,<br />
there are several methods of preserving fruit.<br />
Instead of fresh fruit, they can enjoy jam,<br />
jelly, preserves, and marmalade as well as<br />
chutney and compote.<br />
Of all products made from fruit, fruit<br />
compote is most beloved by gourmets,<br />
especially those who like starting their day<br />
with toast and a cup of hot coffee. In the<br />
Middle Ages, Europeans believed that fruits<br />
cooked in syrup could balance their humors<br />
and protect their health; therefore, they often<br />
ate fruit compote for dessert after a party.<br />
To make compote, fresh fruits are stewed<br />
well with syrup, lemon peel, cinnamon, anis,<br />
and spirits such as rum, schnapps, or fruit<br />
brandy. Meat can be added to make<br />
dishes savory.<br />
Fruit compote tastes best when served hot<br />
with cold yogurt or cream. You can add<br />
almonds and raisins to make it tastier.<br />
The most popular types of fruit compote<br />
are made from pears, plums, peaches,<br />
strawberries, and blueberries. Compote<br />
is more aromatic than Vietnamese jam.<br />
Unlike sweet jam, compote keeps the fruit's<br />
sour taste.<br />
