L’équivalent d’un label de haute qualité pour le célèbrefruit, véritable caviar prisé par tous les grands chefs !DES PÉPITES DE BONHEURLa Côte d’Azur, jardin d’agrumes séculaire : d’un terroir à l’autre, unefructueuse histoire d’arômes et de goûts se raconte là, qui fait venir l’eauà la bouche. Du côté de Vallauris, la coopérative du Nerolium allie savoirfaireet modernité pour concocter, à partir des oranges amères récoltéessur les bigaradiers du secteur, la plus suave des marmelades. Après lesfruits, transitent par la coopérative les fleurs des bigaradiers. Cueillies àla main (entre 4 et 5 tonnes par an), elles fournissent la matière premièred’où sont extraits, après distillerie, l’eau de la fleur d’oranger et le Néroli(huile essentielle utilisée entre autre usage pour la composition desparfums haut de gamme). Vallauris, soulignent ses habitants,est le seul lieu de production de ces précieux élixirs encore enactivité en France. Quant à Menton, on aurait des pépins àne pas mentionner que, loin d’être la capitale du citron (ellelui consacre une fête tous les ans en hiver), la ville abriteaussi une fabuleuse collection d’agrumes, à visiter dansles jardins du Palais Carnolès.And let us not forget the manyfarms devoted to the productionof other fruits, such as mandarinoranges, clementines, kumquats,sweet oranges and pomelos.
