Boulanger de Louis XIV, Charles D<strong>all</strong>oyau fut le précurseur des<br />
créations D<strong>all</strong>oyau. Littéralement séduit et conquis par ses<br />
réalisations, le roi nomme Mathurin, le plus jeune frère de Charles,<br />
chef de fruiterie de la jeune reine de France.<br />
En découle ainsi une longue lignée de descendants D<strong>all</strong>oyau<br />
regroupant tous les métiers de bouche au service de la cour royale.<br />
En 1802, à contre-courant avec l’époque, Jean Baptiste D<strong>all</strong>oyau<br />
décida d’ouvrir la première maison de la gastronomie.<br />
Il ne s’agit pas là d’un restaurant, mais d’une boutique traiteur où<br />
les plats raffinés de la maison sont vendus « à emporter »<br />
L’idée paraît simple mais révolutionnaire pour l’époque.<br />
L’établissement deviendra rapidement une référence parmi les<br />
gourmets.<br />
S’ensuit l’ouverture d’un salon de thé, le premier salon de<br />
thé parisien et la création du syndicat de la pâtisserie par les<br />
descendants de jean baptiste.<br />
Chaque membre de la famille D<strong>all</strong>oyau a su apporté une pierre à<br />
l’édifice et asseoir la réputation de la célèbre maison de renom.<br />
As baker for Louis XIV, Charles D<strong>all</strong>oyau was the originator of<br />
the D<strong>all</strong>oyau creations. Liter<strong>all</strong>y seduced and conquered by his<br />
creations, the King appointed Mathurin, Charles' youngest brother,<br />
as head of the young Queen of France’s fruit stores.<br />
This is how the D<strong>all</strong>oyau lineage began before encompassing <strong>all</strong><br />
the food professionals at the service of the Royal Courts.<br />
In 1802, going again the tendencies of the era, Jean Baptiste<br />
D<strong>all</strong>oyau opened the first gastronomic house. This was not a<br />
restaurant, but a caterer where the house's refined dishes were<br />
sold to take away.<br />
The idea, albeit simple, proved truly revolutionary at the time and<br />
the company soon became a veritable reference for gourmets.<br />
A tearoom soon opened – the first in Paris – and the heirs of Jean<br />
Baptiste later created the pastry syndicate.<br />
Each D<strong>all</strong>oyau family member brought a stone to the edifice of the<br />
house and reaffirms the reputation of the famous house.<br />
