Heirs living up to expectations...<br />

In 1949, Cyriaque Gavillon takes over the D<strong>all</strong>oyau<br />

house but chooses to keep the name unchanged.<br />

Pressed by an urge to innovate and anticipate<br />

the needs of his clients, the patissier creates the<br />

world-famous "Opéra" in 1955, a myth of French<br />

patisserie.<br />

During the seventies, Cyriaque's daughter Nadine<br />

Gavillon-Bernadé steers the helm of the family<br />

business, endlessly taking initiatives and asking<br />

her pâtissiers to have a lighter hand when using<br />

alcohol and sugar.<br />

In the constant goal of aiming higher and thanks to<br />

the intuition of Nadine, the Maison D<strong>all</strong>oyau opens<br />

its first patisserie in Japan in 1982, <strong>all</strong>owing itself<br />

the luxury of becoming the first French gastronomic<br />

house in Asia.<br />

Ambitious and fearless Nadine Gavillon-Bernardé<br />

take over the house in 2010 and take on the<br />

mission of spreading French known-how and<br />

good taste to the four corners of the world.<br />

In 2014, Stéphane Facchin was appointed<br />

president of the managing board and works to<br />

pursue the growth of the house. Today, the Maison<br />

D<strong>all</strong>oyau boasts 38 boutiques in in France and<br />

abroad, including two in Dubai.<br />

More than just a name, the Maison D<strong>all</strong>oyau is a<br />

true gastronomic reference today. Essential and<br />

unsurpassed, it results from centuries of hard work<br />

by families of passionate artists who have made<br />

the best of their talents.<br />

Creative and innovative, the Maison D<strong>all</strong>oyau<br />

pursues its goal of <strong>all</strong>ying taste to innovation.<br />

Although each creation remains unique, it stays<br />

faithful to an ancestral expertise.<br />

Today, the reputation of the Maison D<strong>all</strong>oyau has<br />

gone beyond our borders to conquer the world.<br />

This summer, the house presents its new<br />

collection. "So Cool" includes novel ice creams<br />

with such flavours as strawberry Mojito, Caribbean,<br />

Cranberry & Morello cherries and much, much<br />

more... Also new this year are the ice fingers,<br />

unctuous and tasty ice creams that will satisfy the<br />

most demanding taste bud...<br />
